We are all in this craziness together so why not make the most of your time at home. Sprouting mung or moong beans can be a fun way to teach your kids about the germination process and involve them in the kitchen and cooking. It will also save you some money. Just one cup of dry moong beans can yield a bucket load of sprouts. Use sprouted mung in salads or quick stirfrys or make a delicious Indian style curry…the possibilities are endless. As an added bonus, its a great way to clean out your pantry, while not having to go out shopping for fresh vegetables and risking corona virus or covid-19 exposure! Win, Win!!

Dry Mung Beans – 1 cup
1. Wash and soak Mung Beans over night.
2. Next day (Day 1), rinse and drain Mung Beans in the colander.
3. Place colander with the Mung Beans in the large bowl and place a damp paper towel completely covering the Mung Beans.
4. Place bowl overnight in a dark place like the oven. Oven should be OFF.
5. Next morning (Day 2), remove paper towel and rinse the Mung Beans in the colander under running water, tossing the beans. Drain excess water and re-place the colander in the bowl. Re-wet the paper towel and cover the beans. Place bowl in the oven.
6. In the evening, repeat Step 5.
7. Day 3, repeat Steps 5 and 6.
8. Day 4, repeat Steps 5 and 6.
9. The sprouting process can be stopped at any point, to your preference.
10. Use the sprouts immediately or store them in a Ziploc bag or container in the fridge.
