Imagine this… You called up a couple of friends using your mobile phone and invited them for dinner. While eating, the expression in their faces seem to suggest that there was nothing extraordinary with the food you prepared. If plain White Rice is a little boring when you are having guests over for dinner, try this easy and colorful rice dish and put a little umph to your presentation.
Ingredients:
Basmati rice — 1 cup
Water — 2 cups
Carrots — ½ cup, diced
Frozen green peas – ½ cup, washed
Oil — 2 tsp
Ghee (clarified butter) — 2 tsp
Cinnamon — 1 small piece
Cloves — 4
Green Elaichi (cardamom) — 1
Kala Jeera (black cumin) — 1 tsp
Salt — 1 tsp
Method:
1. Rinse Rice with water until water runs clear – Add 2 cups water and soak for 15 minutes.
2. In a pot with a tight fitting lid, heat Oil and Ghee.
3. Add Cinnamon, Cloves, Elaichi and Kala Jeera – allow them to sputter.
4. Add Carrots and Green Peas and mix well.
5. Add Rice, Water and Salt.
6. Bring to a boil – uncovered.
7. Cover the pot, reduce flame to low and let rice simmer for 15 minutes.
8. Remove cover and stir gently to mix the vegetables and rice.
9. Turn off heat and replace cover until ready to eat.
Serves 4
Tips:
1. Using baby carrots cuts your prep time.
2. Once the pot is covered, don’t keep opening the lid to check on the rice. It will be perfect in 15 minutes without any intervention.
3. Do all your prep work (chopping, etc) while the rice is soaking — it’s more efficient!

Awesome…..i really loved it and tasted every spoon wondering “i made this”…
I have watched lots of videos in 2 days but tried only the jeera rice and raita.
Iam impressed with the pots that u serve the dish in…i liked the container in which u guys served the adai…all the ceramic bowls looks great…where do u get these pots? please let me know………more than the food i really admired the bowls….though in some videos i know after it is almost done, i feel like swiching it off but i continue to watch till the end to have a look at the serving bowl…..

Hi Purnima,
Cooking rice in a pressure cooker tends to make it a little more soft and mushy (personally, I prefer cooking plain white rice in a pressure cooker), but for pullao type of rice dishes, you may not want it to be so soft. Maybe you can try it in the pressure cooker using a little less water. You can definitely use a rice cooker for this recipe.

This is not a stand alone dish and usually eaten with some sort of curry (which can be spicy). You can definitely add some green chilies if you like.

This was a super hit with my hubby:-) I just followed the instructions as mentioned and I enjoyed every bit of it.I really like it when you mention that just have faith and not keeping peeking into the dish every now and then. I timed it well and It was just too good. the kitchen was filled with the aroma and I will certainly put this on theparty menus next time:-)

Thanks for the lovely site, I visted India last year and was fond of basmati rice especially for its fragrance.
