Prep Time: 15 minutes
Cook Time: 20 minutes
Serves 4

Ingredients:

Basmati rice — 1 cup
Water — 2 cups
Carrots — ½ cup, diced
Frozen green peas — ½ cup, washed
Oil — 2 tsp
Ghee (clarified butter) — 2 tsp (Oil for vegan substitute)
Cinnamon — 1 small piece
Cloves — 4
Green Elaichi (cardamom) — 1
Kala Jeera (black cumin) — 1 tsp
Salt — 1 tsp

Method:

1. Rinse Rice with water until water runs clear – Add 2 cups water and soak for 15 minutes.
2. In a pot with a tight fitting lid, heat Oil and Ghee.
3. Add Cinnamon, Cloves, Elaichi and Kala Jeera – allow them to sputter.
4. Add Carrots and Green Peas and mix well.
5. Add Rice, Water and Salt.
6. Bring to a boil – uncovered.
7. Cover the pot, reduce flame to low and let rice simmer for 15 minutes.
8. Remove cover and stir gently to mix the vegetables and rice.
9. Turn off heat and replace cover until ready to eat.

Tips:

1. Using baby carrots cuts your prep time.
2. Once the pot is covered, don’t keep opening the lid to check on the rice. It will be perfect in 15 minutes without any intervention.
3. Do all your prep work (chopping, etc) while the rice is soaking — it’s more efficient!

  1. I’m having some 6 guests over for lunch. Coconut chicken curry will be the main dish. On the plate I’d like to serve black rice with it. Also on the plate will be chunks of fresh papaya mixed with pieces of fresh orange.

Does the menu sound interesting, tasty and okay?

Please, can you suggest a recipe for the black rice? If you can help me I think you’ll need to include the recipe in your email reply.

    I’d really appreciate your help.

    Thank you.

  2. Hi! You people are doing a good job. This website is really useful for beginners like me! What ever im cooking, now i refer your website.;-D Just a few questions. how can i cook white rice in the preassure cooker?(the amount of water, how many whistles.etc) How to cook white rice in a stove top? Waiting for your reply.

    1. Hi Shazna,

Cooking white rice in a pressure cooker is really easy. The water ratio is 2 to 1 rice. Pressure cook for only one whistle, switch off the stove and allow the pressure to go down by itself. On the stove top, the ratio is the same, but you need to bring the mixture to a boil, reduce the flame to a simmer, cover the pot and let it cook for 15 minutes.

  12. LOVE this rice! I now make this rice (without the veggies) to go with every curry, instead of just plain basmati. Everyone I’ve made this for loves it! Thank you guys – keep the amazing recipes coming! 🙂

  13. This was a super hit with my hubby:-) I just followed the instructions as mentioned and I enjoyed every bit of it.I really like it when you mention that just have faith and not keeping peeking into the dish every now and then. I timed it well and It was just too good. the kitchen was filled with the aroma and I will certainly put this on theparty menus next time:-)
Great work and Keep it going Hetal and Anuja!

  14. This is not a stand alone dish and usually eaten with some sort of curry (which can be spicy). You can definitely add some green chilies if you like.

  15. Hi Purnima,

Cooking rice in a pressure cooker tends to make it a little more soft and mushy (personally, I prefer cooking plain white rice in a pressure cooker), but for pullao type of rice dishes, you may not want it to be so soft. Maybe you can try it in the pressure cooker using a little less water. You can definitely use a rice cooker for this recipe.

  16. Awesome…..i really loved it and tasted every spoon wondering “i made this”…

I have watched lots of videos in 2 days but tried only the jeera rice and raita.

Iam impressed with the pots that u serve the dish in…i liked the container in which u guys served the adai…all the ceramic bowls looks great…where do u get these pots? please let me know………more than the food i really admired the bowls….though in some videos i know after it is almost done, i feel like swiching it off but i continue to watch till the end to have a look at the serving bowl…..

    great guys…..good show….
