This is one of the recipes we made during our live video chat show on Friday. If you have not stopped by to chat live with us, please come see us on any Friday at 1:30PM Central.
Try this Black Bean and Corn Dip next time you are having a get together. It takes just minutes to make and is served with Tortilla chips. It’s fresh, healthy and your friends will be asking for more!
Ingredients:
Black Beans – 15 oz can, drained & rinsed
Whole Kernal Sweet Corn – 15 oz can, drained
Onion – 1/2 medium, finely chopped
Bell Pepper – 1/2 , finely chopped
Tomato – 1 large, finely chopped
Jalapenos – deseeded and finely chopped to taste
Cilantro – 5 sprigs, finely chopped
Salt – to taste
Lime Juice – to taste
Taco Seasoning – 2 tbsp or to taste
Method:
1. Combine all the ingredients in a bowl.
2. Allow the mixture to marinate for approximately 30 minutes.
3. Serve with Corn Chips.

Taco Seasoning is available at most of the grocery aisles in the international section.
Incase you can’t find it, here are some alternatives:
1. Basic ingredients for taco seasoning are: onion powder, garlic powder, cumin powder, paprika, and oregano. You can add crushed red pepper for the heat.
2. Use Chaat Masala and some spices from your cabinet.
3. Add cayenne powder, paprika, chilly powder, and some cumin.

Tried out this starter at the social of the student organization of my department…………..it was a big hit…..people present from different parts of the world liked it. I did add chat masala to make the dip lil Indianized:):)

If I want to make it a day before the party, should I add Tomatoes & Salt while mixing all the other ingredients or add these two when ready to serve (say 1/2 hr before)?

Hi Alpana,
This dip needs to be made ahead of time so that the juices and the spices season the dip. You can make the whole dish and serve it right out of the refrigerator (just give it one more mix before serving)

also, can i add some shredded mozzarella cheese? Before serving ? or should i add it in the mixing bowl when we toos all the ingredients?

Hi there,
This is a dip and is served with chips and if served as an appetizer, it’ll serve about 8-10 people.
Taco Seasoning is available at Walmarts and any of the bigger grocery stores.
Mozzarella cheese really does not go with this dish….
