Zucchini with Cilantro and Lime

Zucchini is a wonderful vegetable from the squash family that is perfect for people on a diet. It is low in calories, high in water content and a great stomach filler. Try this quick and easy stir fry recipe that takes just minutes to prepare.

Prep Time: 10 minutes
Cook Time: 3-4 minutes
Serves: 2-3

Ingredients:

Zucchini – 1 lb, chopped thin
Oil – 1 Tbsp
Mustard Seeds – 1/2 tsp
Whole Dry Red Chilies – to taste
Asofoetida – pinch
Curry Leaves – 1 sprig
Green Chilies – to taste, finely chopped
Salt – to taste
Lime Juice – 1 Tbsp or to taste
Cilantro – 10 sprigs, finely chopped

Method:

1. Heat Oil in a medium pan on medium heat.
2. Add Mustard Seeds and allow them to pop.
3. Add Whole Dry Red Chilies, Asofoetida, Curry Leaves and Green Chilies. Stir.
4. Add Salt and Lime Juice and stir.
5. Quickly add Zucchini and toss to cook for 2 minutes.
6. Switch off stove and mix in Cilantro Leaves.
7. Remove Zucchini in another bowl to prevent over cooking.
8. Serve hot or cold as a salad of vegetable side dish.

  2. Just made this. Went easy on the green chili and didn’t have curry leaves, but this turned out wonderful. Just wondering, what purpose do the curry leaves serve? What flavor do they add? Thanks!

      The purpose of curry leaves is purely for the flavor they impart on a dish. It is a unique flavor that is not easily replicated. When added to hot oil, they flavor the oil and in turn the oil flavors the dish.

    Can you please tell me what this Zucchini is in Hindi .. Some sites say it is Tori…but i m not convinced with that having look at their colour… 😐

  8. Great recipe Hetal & Anuja! Will def. try it out, especially coz its low in calories ;). These days most of us are health conscious! That is one of the reasons i like ur site.
    Can u tell me where did u guys find those soup spoons?? I hav been searchin these since ages… i’ve tried searchin in Bed Bath& Beyond, Corelle, Walmart… u name it. I really need this for Eid (which is on 1st oct. or 2nd) i cant imagine havin Shirkurma (i guess u def. kno what this is) without these spoons!
