Just made this. Went easy on the green chili and didn’t have curry leaves, but this turned out wonderful. Just wondering, what purpose do the curry leaves serve? What flavor do they add? Thanks!

Hi Abhishek,
The purpose of curry leaves is purely for the flavor they impart on a dish. It is a unique flavor that is not easily replicated. When added to hot oil, they flavor the oil and in turn the oil flavors the dish.

Hi Kaur,
Zucchini has a very tender peel so you do not have to peel it.
