Vegetarian Tortilla Soup

Tortilla Soup is such a wonderful, wholesome soup. It is perfect to warm your heart and your stomach on the days when you need a little help. The different levels of flavor, the inviting colors and a whole-bodied look make it a perfect package.

Ingredients:
Oil – 2 tbsp
Corn Tortillas – 2, chopped
Garlic – 4 cloves, minced
Cilantro/Coriander Leaves – small bunch, finely chopped
Jalapenos – to taste, finely chopped
Onion – 1/2, chopped
Diced Tomatoes – 14oz can
Cumin Powder – 1 tbsp
Salt – to taste
Red Chili Powder – to taste
Bay Leaf – 1
Stock/Broth – 2, 14oz can (vegetable, chicken or beef)
Mushrooms – 3 large, chopped
Zucchini – 1/4, sliced
Carrots – 1, matchsticks
Monterey Jack Cheese – garnish
Avocado – garnish
Tortilla Chips – garnish

Method:
1. In a open pot, heat the Oil on medium heat.
2. Once hot, add in the Garlic, Onions, Tortillas, Jalapenos and the Cilantro. Cook for 2-3 minutes.
3. Add in Diced Tomatoes, Bay Leaf and Cumin Powder. Cook for 2-3 minutes after it comes to a boil.
4. Add in Salt and Stock, mix well.
5. Add in the vegetables – Carrots, Zucchini and Mushrooms.
6. Add in Red Chili Powder, mix well, cover and cook for 15 minutes.
7. Garnish bowls with some Cheese and a slice of Avocado and some crushed Tortilla Chips.

Tips;
– Serve with lime/lemon wedge for a little twist.

    The corn tortilla tends to break apart a little after I add in the diced tomatoes? Should I let the corn tortilla fry a little longer?

      As with most spices, bay leaves add a subtle distinct flavor. However, if you just don’t have it, you can definitely skip it.

  2. Absolutely one of the best soups I have ever made. I make this frequently with my mother and we enjoy all the different vegetables and flavors. My favorite part of the soup is when you get down to the cheese and avocado on the bottom of the bowl. It just tastes so creamy and yummy. Thanks for sharing this!   3. I used red enchilada sauce and vegetable stock as the base and added a can of tomatoes and the spices and vegetables in your recipe. Also served it over some rice and beans to make it a little more hearty. Thanks for all the great recipes and ideas!

    Just wanted to share with y’all that I had made the Tortilla soup (just added black beans and corn as my twist), the salsa and the bean and corn dip when I invited my family over for dinner and they absolutely loved it all!! it was a big hit!   6. Hetal & Anuja, is it ok to use regular tortilla not the corn one. I’m having guest tomorrow pls tell me. I’m planning to make it for them……..pls reply.

      1. Hetal tried this and it cameout superb…My hubby loved it a lot. BTW, corn tortilla was also not holding the shape, it was like shredded once it was cooked (even i used big pieces), never mind we loved the taste. I added taco seasoning too.

        Next time i will saute the corn tortillas seperately and i’m planning to mix at the time of serving. Thanx ladies for ur yummy recipe.

    They are the soft kind and make sure you get the ones that are made of corn. They can be bought at any grocery store (Walmart, Kroger etc.)

    Hi,

    I need some information about ovens… Is it good having a gas oven or electric oven…I know this question is stupid. My problem is i have learnt cooking all your recepies using a electric stove and oven. And now i am planning to shift my house… and my new apartment has gas connection… and the kitchen has gas oven. Once i tried makeing Roasted Chutney Paneer in my friends house ,she had gas oven and all the panner got stuck to the tray.It din cook properly. But in my current house i hav electric stove/oven.. and when ever i make the Roasted Chutney Paneer . it is perfet…

    So my question is… is thr any difference in electric and Gas ovens…..which 1 is better.

    Please i wil be happy if any one answers my question.
