Queso Dip

The king of appetizers and yet the easiest of them all! Queso aka Chili Con Queso, in Spanish means Cheese or Chili with Cheese. Don’t be alarmed if you are not too fond of chilies…just skip it and it’ll be just as good! The wonderful part about this starter is that it is easy to make and does not have to be babied…people will just hover around it! It is a perfect appetizer for parties (big or small) & holidays!

Ingredients:

Velveeta Cheese – 16 oz, cubed
Cilantro (Coriander Leaves) – handful, finely chopped
Diced Tomatoes with Green Chilies – 10 oz can

Method:

1. Cube the Velveeta and add to the crock pot.
2. Add in the Cilantro and the Diced Tomatoes Can along with the liquid.
3. Turn the crock pot on high and allow the cheese to melt for a couple of hours, mix occasionally.
4. Once the cheese has melted, turn the crock pot down to a ‘low’ or ‘warm’.
5. Serve in the crock pot with tortilla chips.

Tips:
1. When you are in a rush…use the microwave to melt the cheese. Mix every minute.
2. Don’t have a can of diced tomatoes…use Salsa!
3. Don’t have Salsa…chop tomatoes, green chilies, Cilantro and a dash of salt!
4. Made too much and have left overs? Don’t want to throw and waste? Freeze in a clean freezer safe container till the next party! Defrost at room temperature and heat and melt. Freshen it up with some freshly cut cilantro and no one will guess….shhhh!

    1. Hi Peri,

      The cheese we used is a processed one but you could use regular cheddar cheese. The recipe and process is different though. You would have to make something like a basic white sauce with milk, butter/oil, and flour first and then melt the shredded cheese into it.

  3. How many people will your recipe feed and do I double up on the cans if I take the entire block of velveeta cheese?

    Also, do I keep it on the crock pot while guests are serving themselves. Of course I will let it cook for few hours before serving.

  4. can we add water or milk to keep it in liquid consistency.will it spoil the taste.also,velveta cheese is not available.any other substitute!

    1. Hi Khushboo,

      You can add a little milk to thin it out but Velveeta thickens as it cools, even with a lot of milk. You basically have to serve it warm. This is a quick and easy recipe for queso so there is no substitute for the Velveeta…that would be a completely different recipe.

    1. They are just foil stickers and so far they have not come off. regarding the cleaning, the outside of the corck pot is wiped down with a wet cloth/paper towel.
      I decorated it for a party and just love it and it’s so much prettier than the boring white.

    1. Yes, you can. Melt the cheese either in the stove-to or in the microwave and add in the other ingredients and mix well.
      The problem you run into is that the cheese keeps getting hard and will not be of the dipping consistency. So having said that, for small amounts it will work very well.
