Gluten Free Apple Crumble

You will enjoy making this quick and easy dessert which tastes delicious with whipped cream, or can be enjoyed warm from the oven by those who are allergic to dairy.

Ingredients
3 medium Granny Smith apples, peeled and diced (approx 4 cups chopped)
¼ cup granulated sugar
¼ cup raisins
¼ teaspoon cinnamon powder
¼ teaspoon powdered nutmeg or allspice
3/4 cup orange juice
2 tablespoons cornstarch
1 tablespoon grated orange zest
½ teaspoon vanilla extract (optional)

For the topping–

½ cup rolled oats, lightly pulsed
1/4 cup Rice Flour
1/4 cup Instant Oats Flour
¼ cup brown sugar
¼ teaspoon cinnamon powder
1/8 teaspoon xanthan gum
1/2 stick/ 2oz/ 4 tbsp butter

Method
Preheat oven to 375F (approx 190 C)

Butter 4 eight ounce custard cups (or an 8inch pie dish) and set aside
Combine apples with granulated sugar, orange zest, vanilla extract, cinnamon powder, nutmeg or allspice
Stir in the raisins
Mix 2 tablespoons of cornstarch into the orange juice and pour into apple mixture
Spoon into buttered cups and set aside.

To prepare topping—
Combine Bisquick baking mix, oats, brown sugar and cinnamon powder.
Cut in butter with pastry blender or two knives till mixture resembles coarse meal
Divide mixture into 4 equal portions and sprinkle each apple cup with crumb topping
Bake for 30-35 minutes
Serve warm topped with whipped cream or ice cream.

Dairy free version

Use dairy free margarine instead of butter
Make a simple caramel-orange sauce for a delicious topping—
In a small saucepan, mix 3 tablespoons dark brown sugar into ½ cup orange juice.
Place saucepan on stove-top over medium heat
While the juice mixture is warming, mix 2 level teaspoons cornstarch into ¼ cup orange juice.
Pour into saucepan and keep stirring till mixture thickens and comes to a boil.
Remove from heat.
Let cool for a few minutes.
Serve warm sauce with apple crumble.

Variation-
Add chopped dates instead of raisins

If you don’t have rice flour, use Gluten Free Bisquick instead.

  1. Hi, I so love Auntie and her healthy cooking. Thank you so much for gluten-free and allergy-free recipes. About xanthum gum. This product is a chemically derived product from a kind of bacteria and although it is claimed to be used to make that chewy texture, you should know many people have serious problems with it. (Me and my whole family get sick when we have it in anything. My whole family has dairy allergy and I’m diagnosed Celiac.)
    So, here’s the scoop: you don’t need it. It is a chemist/food industry person’s idea of something to mimic gluten. You don’t need it though. If you have a need for some more gummy or chewy texture, soak some chia seeds in water and use a few tablespoons of it. This also adds tons of antioxidants to your dish, plus fiber. I’ve been gluten free for over 10 years and I can tell you, this xanthum gum that they put in all products gluten-free is simply not needed. I actually like the texture of all baked goods better without it. It really doesn’t add anything to holding the product together either. Thank you again.         Oats are considered healthy but it depends what school of thought you follow. Recently, there are a lot of people who believe that all carbs are bad (even whole wheat, oats, etc).

    I have a Microwave oven with the option of a convection mode.As it differs from a regular oven, how should I modify the temperature and duration of baking to adjust to that ?

      We’re so sorry but we have never used a convection type of microwave and don’t know how it works. Sorry.

  4. Thanks Hetal and Anuja for this wonderful website. We tried your gluten free puris and chapatis and our daughter who was not able to have chapatis/puris for years really enjoyed it. Just wondering if oats have gluten in it. Is there any substitute for oats that we could use in this recipe?

    1. Hi Gita,

      From what we understand, oats are gluten free but the danger may lie in contamination. Many times, oats are produced in facilities that also deal with wheat. You can use the Gluten Free Bisquick as a substitute.

    I love you guys and I love all the recipes you show. I have a question with xanthan gum. Can I cook this recipe w/o it? Or if I can, what are my options. My question might sound stupid but I do not really know what it does to the recipe. Please let me know.

    1. Hi Sneha,

      Xanthan gum is used whenever you need a gel-like quality in a recipe. It is also used as a substitute for wheat gluten in gluten-free foods and as a thickener. Since this recipe also has corn starch, you may be able to get away without using it but we have not personally tried it.

    Yippee …. I am the first to comment. Thank you for the recipe. I have a question though, I don’t have a pie glass baking dish ( like the one you showed on the video) and i don’t have ramekins too. Can I make this dish using a nonstick cake pan 9 inch round cake pan? Do I need to increase/decrease the oven temp if I use this cake pan?

    1. Hi Jayashree,

      You can use any type of glass baking dish if you don’t have a pie plate. Metal baking trays (especially dark ones) tend to heat up faster than glass so you may have to reduce the temperature a bit or bake for a shorter time. Again, since we have not tried it so we don’t have an exact temperature.
