Milk Cake (Eggless Dessert)

Perfect for the holidays and a one step dessert – can life really get better than this? Milk Cake is a recipe that is simple and easy and yet has the look that you’ve probably slaved over the dish for hours 😉 ! The combination of the raisins, dates and the cranberries and a great suprise element in the creamy milky flavor of the ricotta. Did we mention that it’s eggless? Thank you Payel Mukherjee for sharing this awesome and easy dessert. This one is a keeper for sure!

Prep Time: 5 min
Cook Time: 30-40 min
Serves: 8-10

Ingredients:
Ricotta Cheese – 15oz / 425gm
Semolina/Suji – 1/4 cup
Sugar – 1/2 cup
Golden Raisins – 1 tbsp
Dried Cranberries – 1 tbsp
Cashews – 1 tbsp, broken

Method:

1. Pre-heat Oven to 450F / 230C.
2. Mix all the above ingredients in a bowl.
3. Mix and allow the Sugar to melt and combine.
4. Grease an oven-proof 6″X6″ pan.
5. Pour the mixture into the pan.
6. Place the pan in the pre-heated Oven in the middle of the oven and in the middle of the rack.
7. Bake for 30-40 minutes till the edges get a little brown color.
8. Take out of the oven and allow the Cake to rest for 15 minutes.
9. Flip the Cake out of the pan and cut into small pieces.
10. Serve warm.

  1. I tried this over Christmas. It looked good but we did not like the taste:( It did not taste like milk cake at all and texture was also very different. I missed the bhuna hua khoya wala taste we get in regular milk cakes.

    I guess we are too hooked on the milk cake we get from halwai shops in Delhi.

      Sorry you did not like the taste…and it is not supposed to taste like the milk cakes that we get in India. We are glad you tried it though…. 🙂

      1. Arrey, no problem at all. So far, whatever recipes I have tried, we liked most of them. Milk cake and the asparagus sabzi has been the only two items we did not LOVE. They were still okay though. Rest of the items came out AWESOME:)

        I actually feel very bad putting down any criticism – even if it is constructive. You both work so hard to get these recipes to us and it doesn’t seem fair to you girls. I wish this cake was not called the “milk-cake” – something me and my hubby adore. Our expectations would have been different then:)

    1. Hi Sunita,

      Cheese is a very tricky subject for vegetarians. Many of the hard cheeses contain rennet, a natural enzyme found in the stomach lining of cows. However, we believe that the process to make ricotta cheese is similar to paneer and therefore does not require this enzyme. You would have to check with the manufacturer of the brand to be exactly certain.

      You cannot use cream cheese in this particular recipe. However, we have several recipes that use cream cheese (Stuffed Jalapenos, Saffron Mango Mousse (Shrikhand), Pizza Dip).

  8. I think recipes like these are & will always be a hit as it is very simple &easy to make, you cam always try to be alittle bit more daring & add other herbs, the Mexican VEET cheese you get in USA would really lift the taste .

    I just had to try this recipe! I mixed half the batter with saffron and half with cardamom and baked it side by side in the same dish. I did put nuts in it but no raisins or cranberries.
    My cake tasted like a rich milky “Satyanarayan no shiro”! Is this how it is supposed to taste? I could feel the texture of the suji. The sweetness was just right for me.

      This cake is meant to be on the flatter side. Though we have not tried baking it in a bread loaf pan, we fear that the baking time and texture will be quite different.

      This was a viewer submitted recipe so we followed it exactly. We are not sure how fresh coconut will react as far as letting water go while cooking so you may want to consider dried coconut flakes or powder.

      Take a cooker, add 6-8 cups of Sand n spread it evenly… now swith on the flame for high for 10 mins..
      now place the cake mixture pan on the sand. cover the cooker lid.. make sure the weight (whistle) & gasket (rubber ring) is removed from the lid… n cook on medium flame. (time i dont know) i can say, u can remove the lid n see in between the edges r brown (or) insert a tooth pick stick n take out so dat it comes clean…

This is a beautiful recipe, but did you know that the same thing can be made with adding chive & salt & grated cheese instead of sugar + nuts ,you get away with it & call it vegetraian KISH..This kish is really nice as you can add things as you like. Do try earthlings & you will really be pleased with yourself !!!!!!

    Thanks for showing the recipe. This desert is called chhena Poda and its a very popular and old sweet dish in Orissa. Oriya people prepare it regularly at home or restaurants.

    Generally we prefer to prepare the Ricotta Cheese (Chhenna) at home as that makes the Chhena Poda much better than the earlier.

    1. have u tried at hypercity, goregaon, Khushboo? they have most amazing cheese collection.so chances are that they might have it, on my next india trip which is due soon will find out n post here…

    2. you can use home made paneer (don’t squeeze out too much whey though), in fact the original dish from Oria region of assam (Chenna Podha) is calling for homemade fresh chenna (Paneer) only.

  25. Hey its wonderful eggless recipe..so can we make cottage cheese at home..is it the same paneer we make from milk using curd or lemon juice ??

      The process for making ricotta cheese (btw – different from the store bought cottage cheese) is similar to paneer but somehow, the store bought ricotta cheese texture is slightly different and softer than paneer.
