Cucumber and Mint both spell “Summer”, “Refreshing”, “Cool”! This wonderful Cold Soup is a great alternative to the warm, hot soup that we are more familiar with. Try this awesome, simple yet cool soup over the summer for a party or better yet, a barbecue! For garnish add a sprig of fresh Mint and a slice of Cucumber and enjoy!

Prep Time: 10 min
Cook Time: 5 min
Chill Time: 1 hour
Serves: 4-6
Ingredients:
Cucumbers -2
Mint – a handful of leaves
Oil – 1 tsp
Onion – 1/2, med. chopped
Jalapenos – to taste, chopped
Garlic – 3, chopped
Stock/Broth – 3 cups
Sour Cream (or Hung Yogurt) – 1/2 cup or to taste
Salt – to taste
Roasted Cumin Powder – 1/2 tsp
Black Pepper Powder – to taste
Method:
1. Wash and peel the Cucumbers.
2. De-seed and roughly chop them
3. In a skillet, heat the Oil.
4. Once hot, add in the Onions and Jalapenos and saute for a couple of minutes.
5. Add Garlic and cook till light golden in color.
6. Transfer them into another dish to allow them to cool down faster.
7. In a blender, add in the cooled Onions and Jalapenos, Cucumber, Mint Leaves and some Stock.
8. Puree it till smooth.
9. Add in the balance of the Stock and the Sour Cream or the Hung Yogurt and blend again.
10. Season with Salt, Black Pepper and the Cumin Powder and mix again.
11. Taste and adjust as needed.
12. Chill for an hour in the refrigerator and serve chilled.
Tip:
1. Substitutes for Sour Cream –
-Hang 1 cup of Yogurt and allow it to reduce to 1/2 cup
-Use Greek Yogurt

I was looking for a light lunch recipe for one on your website today and stumbled onto this recipe. It was so easy to scale it down and it tastes awesome! (writing this as I’m eating it)
I didnt have raw jalapenos, so used deseeded pickled ones and substituted quark for the sour cream. 🙂

Something wrong with this video. Now we cannot hear when you guys talk. Only the music part plays well. Couldn’t hear anything that you guys spoke. I have noticed the same problem with other older videos on your website. I didn’t have any problems when I watched these videos first time.

The video plays fine on our side. Over the years, in hopes of improving our show, we have made several changes to our equipment and processes (and made some mistakes doing so) :). This may be one of the videos that the sound was recorded only on the right or left channel. Are you using a different speaker system (or headphones) to watch this video than you may have before? That may be the problem as the sound is coming in from only one channel.

Regarding Paneer Bhurji, there are sooo many variations to that recipe, basically, you can scramble and add in anything you have on hand and it’ll taste good 🙂

home made but veggies are waste afterwards
I do not waste veggies for broth. Instead I use all kinds of peels (bottle gourd, chinese okra, carrots you name it) stems (cabbage, cauliflower, spinach) which are left over after I have used the veggies for cooking. Basically I use every part of the veg that was not used for cooking daily recipe. These are perfectly edible. As I come across I save all of it for a week or two in freezer. I wash these peels and stems very well. Then I boil them with tomato, celery and onion and other aromatics. Please try this method. Since it comes from “discards” it’s not really a waste. And you won’t believe the flavor you get!!!!
I completely disagree with this comment. I was surprised how one can make a comment like this. actually noticed the opposite. The recipes that you have give us tips on how to use easily available stuff like hung yoghurt(in this recipe), lady fingers(n the tiramisu recipe),broth….. there are so many recipes where you guys have given alternatives. ofcourse, some of us may not have readily needed ingredients but that’s just our fault in not stocking up the basics… keep up the good work

The broth is where the flavor and the nutritional value is. Having said that, you can add water but the flavor may not be there.
