Our humble homage the great foods of Rajasthan. Rajasthan is known for it’s color – in food, clothes, music and art. This Kande Ki Subzi is just as colorful with such a wonderful rustic flavor that has just got to be paired with Bajra Ki Roti and it is sure to transport you to the rural, rustic and beautiful Rajasthan. Enjoy our love for Rustic and colorful India.
Prep Time: 10 min.
Cook Time: 25 min
Serves: 8
Ingredients:
Onions – 2 lbs (approx 1 kg), sliced
Oil -2 tbsp
Ghee (Clarified Butter) – 1 tbsp
Cumin Seeds – 1 tsp
Ginger – 1 tsp , finely ground
Garlic – 1 tsp, finely ground
Green Chillies – to taste
Yogurt – 1/2 cup
Water – 1/2 cup + 1/2 cup
Coriander Powder – 1 tbsp
Turmeric Powder – 1 tsp
Red Chili Powder – to taste
Salt – to taste
Paprika – to taste
Method:
1. In a pan, heat Oil and Ghee on medium flame.
2. Once the Oil is hot, add in the Cumin Seeds and allow them to sizzle.
3. Add Ginger, Garlic and Green Chillies and cook till the Ginger and Garlic get a little color.
4. Meanwhile, in a bowl, mix Yogurt with 1/2 cup of Water. Remove lumps.
5. Add spices to the Yogurt/Water mix – Coriander Powder, Turmeric Powder, Red Chili Powder & Salt. Mix well.
6. Lower temerature of the flame and add in the Asafoetida.
7. Add in the Yogurt/Water mixture while stirring continuously.
8. Keep mixing and stirring till the Oil floats on top of the mixture (approx 3-5 minutes).
9. Add in the Sliced Onions and mix well.
10. Add another 1/2 cup of Water to the bowl and add in that water to the pan as well.
11. Increase the flame to a medium high and allow the Onions to cook.
12. Add in Paprika or additional Red Chili Powder to give the dish a great color. Good time to do a taste-test.
13. Mix and allow the Onions to cook for approx 15 min till the moisture has been absorbed.
14. Serve hot with some Bajra Roti or Chapatis or Naan.
Tip:
1. If you are sensitive to the sharp flavor of the Onions, try using milder white onions instead of the Red onions.

7 months ago I married into a Rajasthani family and have since fallen madly in love with Jaipur. I have to say, Chokhi Dhani is probably the best place to eat in the world – the food is delicious beyond belief, and the affection with which the hosts serve (read STUFF) you, is legendary! For all the SMTC family members who haven’t visited Jaipur and eaten at Chokhi Dhani, “aavo, padhaaro mhaare desh!” (come, you are welcome to my land !)

I would love to visit Rajastan some day and spend couple of days of vacation there and enjoy the place & food.
Curry looks good. Never thought of cooking onion with yogurt! I will give this a try.

Actually in Rajasthan most of the dishes are cooked with yogurt based gravy and even if you cook dry subzi we add yogurt while eating
..Try cooking aloo ki dahi wali subzi in the same way and you gonna relish it.

Yes, you can use ginger/garlic paste but just a word of warning…if you use store bought ginger/garlic paste, it tends to splutter a lot in the hot oi. Be careful or use homemade.

Coming from Rajasthan I just went nostalgic. I swear though I make all these as a normal meal but wanted to see your version, but never dared to request you. As I thought Rajasthani cuisine is too rustic and you would not be attracted towards it or not interested. It has a typical flavour and taste unknown to most other people even in India.
Hope Dal-bati-choorma, gattey ki sabji, ker-saangri ki sabzi, lahson ki chatni, Papad ki sabzi, mirch ke taporey, Bajarey ka kheechda, Makki ke dhokley and on and on….are following too
I am extremely happy to see Rajasthani cuisine being given a place in your Kitchen and in others’ kitchens too via your SMTC. Keep going.

What a simple and an elegant subzi! Anuja, I share the same sentiments with you about Chauki Dani (I hope I spelt it right). It was such a wonderful ‘experience’ being there! Did you have their heavily ghee-laden jalebi’s at the end of your meal? My God! It was just soo good!

Just curious, cooking with yogurt, will that kill the live cultures in the yogurt? If yes, will the entree have the health benefits of yogurt in it after being cooked?
