We’re not lying when we say “Chicken Curry in a Hurry”! In less than 30 minutes, you’ll be on your way to enjoying this scrumptious chicken curry in a flavorful and creamy sauce. This quick and easy chicken curry recipe is perfect for students, bachelors or anyone looking for a fast, yet satisfying meal. It also makes a great pot luck dish with very little effort.
Ingredients:
Oil – 1 Tbsp
Onion – 1/2 med, chopped
Chicken – 1 lb (500 g) boneless, skinless thighs cut to bite size pieces
Ginger – 1 Tbsp, minced
Garlic – 1 Tbsp, minced
Salt – to taste
Curry Powder – 3 Tbsp (divided)
Lemon/Lime Juice – 1 Tbsp or to taste
Cream Cheese – 8 oz, at room temperature
Broth/Stock – 2 cups (less for a thicker gravy)
Tomatoes – 1/4 cup (grape or cherry tomatoes work best)
Cilantro – few sprigs, chopped for garnishing
Method:
1. Heat Oil in a pan and add Onions. Cook for 1-2 mins until lightly brown and translucent.
2. In a mixing bowl, add Chicken pieces, Ginger, Garlic, Salt, 2 Tbsp Curry Powder. Mix well.
3. Add Lemon/Lime Juice and mix well.
4. Add Chicken to the pan with onions and mix well.
5. Cover and cook until chicken is done…stirring occasionally.
6. Meanwhile, mix softened Cream Cheese and Broth/Stock with a hand blender and keep aside.
7. When chicken is cooked, add the Cream Cheese sauce, Tomatoes and 1 Tbsp Curry Powder. Mix well and bring to a simmer.
8. Garnish with Cilantro and serve with Rice, Roti, or Bread.

It is an occasional eat and really finger-licking good. You can also use light cream-cheese to make it a little less fattening

What could I use for a cream cheese substitute that might be a little more healthier? Also, what is the preferred stock to use? I would imaging chicken stock would make it taste better. Thanks!

i imagine a no/low fat cream cheese might work. i’m tempted to use plain unsweetened yogurt instead, just don’t know what it would do to the consistancy of the sauce.

Hi Woman,
Any of the cream cheese varieties work well – no fat, low-fat or regular! The other options would be to use coconut milk (but with lesser stock).
Yogurt may work but it might curdle…and/ or it may not cook the chicken (that’s what we think, never tried it)

). On various occasions we have bought them from Oriental stores, Whole foods, World Market or Central Market!

Hey I like this recipe … that curry powder does taste good .. and the cream cheese is more or less like the makhani kind of effect … sort of Indo-European kind of chicken curry .. with less spice … it sure is a time-saver and also something different from the usual spicy chicken gravies ..

Wow ! chicken curry looks very tempting. Instead of cream cheese we can add canned coconut milk too right ?

Thanks for the recipe, often we are in a hurry, yet are hungry for something delicious. There are low fat cream cheese products as well as no fat cream cheese. And this recipe leaves room for some “tweaking” such as adding more spice or a few methi leaves.

Give these girls a break – this quick curry is friggin delicious. I mean come on, aren’t there tons of other recipes that utilize unconventional ingredients and turned out great?
Keep in mind that in this day and age, nobody makes anything the true traditional way like what they did, lets say, 150 years ago. It doesn’t matter if people were to switch things up a little – if it turns out great, why fret?
Anyway, these ladies have put a lot of time and effort coming out with these recipes trying to cater to the different needs. You gotta give them props for that. And they did mention that it was a cooking faux-pas that became a serendipity – the cream cheese wasn’t supposed to be there in the first place. We, as the audience, should be thankful that Anuja and Hetal are willing to share this recipe – if it was me, I would’ve kept it a secret

The pan that we have used in this video is from Bed Bath and Beyond. Some of the good non-stick pans are Calphalon and Analon but they need to be taken care of.

Please substitute yougurt for cream cheese and exclude lemon juice. Adding cilantro will be great for this dish. Exclude mint but keep all others intact.

Hi Anuja & Hetal,
I am a student on exchange in Canada. I am from India. I had hardly ever cooked before but I really needed to invite my friends over dinner. You website was a resure for me and I used yr recipes of chicken curry in a hurry with zeera rice and dahi wale aloo.
My friends, who were from Europe and Canada, just loved it. They were licking their fingers and literally licked the utensils. It was a great hit.
Thanks a lot to you guyz to make it so simple for us. I can now say that I am a good cook. you made my day. and u know what… i’m just so addicted to Indian cooking now… i just can’t have enough of it.

However, I often run into the trouble of not knowing what some ingredients are or where I can obtain them…which is a shame…But i will figure them out
Just wondering, is curry powder something that you can get in grocery stores like safeway?

We’re so glad you are finding SMTC useful! Curry powder is becoming main stream so you may be able to find it in the spice aisle of your local grocery store but we suggest you make a trip to an Indian grocery store to stock up on basics.

Just wanted to let you know that I tried this recipe and both my husband and I LOVED it. It is one of the best curries I have ever made. Just to let the other readers know, I used only half of the required cream cheese and it was a reduced fat one at that. I did pour a bit of light coconut milk in as well… it came out great! This one is definitely a keeper.

My friend introduced me to this recipe and your site…as a grad student (and one who is still learning to cook, haha), this recipe was easy to make, easy on my budget, and absolutely delicious! It was a very welcome change to my boring student diet.
