to desi girl-Hi i do remember seeing a baked breaded eggplant on the food tv channel recently. Flour-egg-panko then bake 400 degrees for i believe 20 minutes. i think it was sandra lee. But as a vegetarian, and also knowing that many vegetarians avoid eggs, i do know that flaxseed mixed with water makes a gelatinous stick so you might try that instead of the egg . Or egg replacer mixed with water,or maybe buttermilk if you use that. Also anuja, what can i use instead of soy nuggets in the bb-burger?

Regarding substituting the soy granules, you could do with either cracked wheat, quinoa, couscous or simply just skip it and add on more of the brown rice

Hi Shauna,
The closest substitute you can try is kidney beans (rajma). We suggest not cooking them too much that they get pasty. Black Beans work well because they hold shape better. Although we have never tried it, we think it’ll work. Let us know your feedback if you do

Is oats added for absorbing moisture? Can oats be added to cutlets for holding the veggies?
Also, have you tried baking the burger in the oven instead of on the skillet? I thought it could help in getting the color for the sides too but might have to flip it once. Just a thought.

You can find Onion Kulchas or Roghani Naan in most Indian stores. You can butter them and stack them up, wrap them in foil and bake in the oven until they are warmed through. Cilantro Mint Raita will go well with Biryani. Here is the link: http://showmethecurry.com/salad-raita/cilantro-mint-raita.html

Hi Sujana,
In the US, black beans are available as dried beans that you soak and cook or in cans (tins), ready to use. They are black and approx half the size of kidney beans. We have not substituted any other beans for this recipe, but you may be able to use chana (chickpeas). You need a bean that has a little more texture. Kidney beans would not be a good substitute as they get mushy. Soy granules are available in Indian grocery stores and many health food stores. They are made from soy protein and are used to give texture to foods. There is not a good substitute for them so if you don’t find them, you can leave them out.

Hi Noor,
Most US grocery stores carry Refried Beans and it says “Refried Beans” on the can. It is available in the grocery store aisle that has all other Mexican and ethnic foods. Mexican Beans Chilli is not the same. If you read the ingredients, it should say, Pinto Beans, Salt, Water. If you are a vegetarian, please look at the ingredients and make sure it does not say “Lard”.

In this case you are not too far off – cook the chunks as mentioned on the box, squeeze the water/liquid and just pulse it in the food processor till they look like granules

Hi Shalu,
Brown rice really adds a different level of texture that white rice will not provide (it will just get mushy). However, if you are using cracked wheat, you may be able to mimic it.

Hi Shalu,
We have not tried this recipe with cracked wheat but everything needs to be fully cooked (besides veggies that can be eaten raw). To cook cracked wheat you need twice as much water (similar to rice). We also have not used tofu, but you can try using the extra firm variety (add it to the food processor when you are pulsing everything together). Please note that the texture may be different because you are using different ingredients.

Hey Hetal and Anuja
The recipe sounds good to try but can I use poha instead of instant oats in this recipe? will it make it work, or ruin the taste?

Hi Jalpa,
The poha will not ruin the taste but since we have not tried it personally, we cannot comment about the texture. The oats just makes it a bit healthier than using rice.

Hi Shalu,
This recipe makes approx 6 large burgers. Even with the egg, it is fine to freeze the patties. Eventually, you will be cooking them on the skillet and the egg will get cooked.

Hi Anuja and Hetal,
I finally tried this recipe but had to substitute a few things. I had no soy granules so I added an extra 1/2 cup of brown rice and I did substitute chickpeas for black beans. But I have to tell you that these burgers were FABULOUS. I am a vegetarian, but my sis is not and the next thing I know I get up the next morning and she has scarfed down two of them (for breakfast) and was raving about how great they were!! These are much much better than anything you can buy in the store. Thanks so much for a recipe that I know I will use for years to come!!!

Hi Hetal and Anuja
can I use EnerG-egg replacer with some baking powder/soda? do you think it works better.

Hi Divyana,
We have not personally tried EnerG-egg replacer but some people say it works great. Don’t think you would have to use baking soda/powder.

Hi Ladies! Hello from Portugal!
I made these burgers today for dinner and they are amazing! We absolutely loved them! I’ve tried a bunch of other black beans burger recipes and they all had one major flaw, they were just too dry, and also they would break easily while frying. And yours aren’t dry at all and are so easy to fry. They are full of flavor and so worth the extra effort! Thank you so much!

Hi gals,
I made these burgers today and they are OMG! Awesome!!
I didn’t find any black beans in the stores,so I used chickpeas instead. Also I added some wheat germ,1 grated pickled beetroot to the veggie mixture. It was very nice and didn’t fall apart which I was bit worried. The rest of the patties are in the freezer, can’t wait to finish it.
Thanks for a very good recipe.

I was really excited to make this! But when I was done they kept falling apart and were nice and toasty on the outside but mushy on the inside. Any ideas how i can fix it? The only thing I excluded was the Soy Granules. I tried to bake them but nothing changed much.
-Thanks!

Hi Sonny,
It may have something to do with how you processed the ingredients. If you over process it, it will become mushy. The egg in the recipe is used as a binding agent. Did you let the patties rest in the fridge for 30 mins before proceeding?

Hi Nisha,
The maximum recommended length of freezing for most items is usually 4 months.

Hi Cyndi,
You can take put the frozen burger directly on a lightly oiled skillet on low heat. It should heat all the way through.
