Paneer Bhurji

Paneer Bhurji is a quick and versatile dish that is just so delicious! Make it with homemade paneer or store bought paneer for a meal in a flash. For everyone who missed out on Egg Bhurji because you don’t eat eggs, this paneer bhurji (bhujjia) recipe is a fabulous alternative. Enjoy it with roti or chapati or use it as a filling for kathi rolls or puff pastry. Any way you choose to have it, panir bhurji is loaded with protein and goodness.

Cook Time: 10 mins
Serves: 4


Paneer – 14 ounce pkg, grated, crumbled or roughly food processed
Oil – 1 Tbsp
Cumin Seeds – 1/2 tsp
Onion – 1/2 medium, finely chopped
Turmeric Powder – 1/4 tsp
Ginger – 1 tsp, minced
Garlic – 1 tsp, minced
Tomatoes – 2 medium or 1 large, chopped
Green Chilies – to taste, finely chopped
Cumin Powder – 1/2 tsp
Red Chili Powder – 1/2 tsp
Chaat Masala – 1/2 tsp
Garam Masala – 1/2 tsp
Coriander Powder – 1 tsp
Salt – to taste


1. Heat Oil in a medium pan on medium heat.
2. Add Cumin Seeds and allow them to sizzle.
3. Add Onions, Turmeric Powder, Ginger and Garlic and saute for 1-2 mins until Onions are translucent.
4. Add Tomatoes and Green Chilies and cook for 2-3 minutes until Tomatoes are soft.
5. Add Cumin Powder, Red Chili Powder, Chaat Masala, Garam Masala, Coriander Powder and Salt. Mix and cook for 1 minute.
6. Add crumbled Paneer and mix until Paneer is well coated with the masala.
7. Cover and allow the Paneer to heat through (2-3 minutes).
8. Garnish with Cilantro and serve hot with roti or chapati.

Just one quick question, i always use the teflon coating kadai / pans. are you using the hard anodised pan in ur video. i see these hard anodised pans in the shop but i am afraid to buy them cause i am not sure. but the pan looked so smooth and good for cooking. do let me know. kudos to you two once again.

    1. Hi Pris,

      We have both teflon style non-stick pans as well as hard anodized ones. They both work great for different things. Hard anodized also come in two varieties (outside coating and inside coating). Some hard anodized are such on the outside but still have a telfon coating on the inside. If you can find the ones that are hard anodized on the inside, they are great!

    i tried to make it but i did not have ready paneer so i made it fresh but after going in the pan it started to melt and the outcome of the dish was very gooey.. what did i do wrong?

    1. I bet it would have worked better if you had let the paneer sit in the fridge for a few hours so that it would have been firmer. You could always put it in the freezer for 10 minutes or so and get the same results.

  8. It is not necessary to grate paneer. As it gets warmer and you keep turning and pressing the paneer with spatula, it gives a feel of bhurji.

    Try using peas or green pepper, red pepper you will simply love the colors and taste.


  9. I tried this last night, but I didn’t have any paneer, so I decided that I would try the block of firm, light, tofu that I had in the fridge. I cut it up into tiny cubes and prepared the recipe otherwise as given. It was delicious! The tofu, while not as nice as paneer, absorbed the flavor of the masalas and held up well. No proper Indian breads at home either, so rolled it up in tortillas. Worked great! I think that next time, I will add a pinch of sugar while cooking the onions to help them to just start to caramelize. I think the combo of slightly sweet and spicy would make for wonderful roll ups 🙂

    i love paneer also but i was wondering instead of crumbling the paneer can i just make it into little cubes and make it that way

    1. Hi Zara,

      You could but if you crumble or grate it, the masala will mix in better. Also, it is really hard to cut paneer into small cubes.

    I would like to buy one good mini foodprocessor. could you guys suggest which brand food processor is good for our indian food preparations.

    1. I found a nice little 4 bowl Cusiniart mini food processor at Costco for around $25. If you are not a Costco member you could probably find some decent ones at a decent price at Wal-mart, Target, or K-Mart. Just check in the small appliances section.

    Thanks for a wonderful dish. I eat eggs, but am trying to get away from them and tofu cooked like this tends to be a bit mushy. This will be great and I love paneer!!!! Keep up the good work.

  19. I love paneer, but also make a burji with firm Tofu and it tastes great. Just substitute the paneer in this recipe with firm Tofu. Tofu is very bland, so the flavors and masalas mix in well with it!

    Love the Kathi rolls idea. Will keep that in mind for when my son is a lil older(so I can somehow get Indian food into him…LOL)

  20. Try adding some chopped bell peppers and peas to the bhurjee. It turns out amazing. I use it to make paneer rolls once week for my kids’ b’fast. I make the bhurji the night before. In the morning, I just make real thin chapaties and use the paneer bhurji to make rolls, wrap in wax paper and heat in micriwave for about 10 seconds. Serve it with a glass of orange jiuce – healthy and tatsy b’fast is ready:)

    The Paneer Burji is Yummy!!!!.As You’ll said you can add spinach to it,it really comes out well.I have tried it.

    1. Hi Ami,

      The pastry sheets are available at most grocery (Kroger, Walmart, etc) stores. The brand is Pepperidge Farm and they can be found in the frozen foods section next to other desserts.

    1. I marinated using their Paneer Tikka recipe with kabobs and for the left over I did vahrevah chef’s Paneer Tikka Masala. Both turned out too good.
