Thai Sticky Rice with Mango

So, are you ready for dessert yet? There is no better way to end your Thai meal than Sticky Rice with Mango (aka Thai Sweet Rice). With this recipe and very few ingredients, you can create a heavenly dessert that will put a smile on everyone’s face.

Prep Time: 4 to 5 hours soaking time
Cook Time: 30 mins
Rest Time: 25-30 mins
Serves: 4-6

Ingredients:

Thai Sweet or Sticky Rice – 2 cups
Coconut Milk – 14 oz can, divided
Sugar – 1 Cup plus 1 Tbsp
Corn Starch – 1/2 tsp
Salt – 1/4 tsp + 1/4 tsp
Sesame Seeds – 1 to 2 Tbsp (dry roasted)
Ripe Mango – 1, sliced

Method:

1. Wash Thai Sweet Rice very well and soak for 4-5 hours.
2. Drain off water and steam the rice wrapped in muslin or cheese cloth for 30 minutes. Steamer basket of rice cooker works well. 3. Half way through cooking process (15 mins), gently mix the rice to ensure even cooking.
4. Continue cooking for another 15 minutes. Rice should be sticky and translucent.
5. While rice is cooking, mix together 1/2 can of coconut milk, 1 cup sugar and 1/4 tsp salt. Mix well and keep aside.
6. In a small skillet (with the stove off), mix together 1/2 can of coconut milk, 1/2 tsp corn starch, 1/4 tsp salt and 1 Tbsp sugar.
7. Once its mixed well, turn on the stove to low-medium and continuously stir while the sauce thickens (3-5 minutes). Remove from heat and keep aside.
8. Once the rice is fully cooked, transfer it to a ceramic bowl and stir in the 1st coconut milk/sugar/salt mixture. Cover the bowl and allow it to rest for 25 minutes.
9. To plate, lightly coat a 1/2 cup measure cup or small bowl with the 2nd cooked sauce.
10. Fill the measuring cup with the sticky rice and press gently to form a mould.
11. Tap the rice out onto a serving plate and add sliced mangoes to the side.
12. Pour the 2nd cooked sauce over the rice (approx 2 Tbsp per serving or to taste).
13. Sprinkle a little toasted sesame seeds over the top for garnishing.
14. Enjoy it warm.

  1. I love this website and Hetal and Anuja you do such a fine job!! Congrats and All The Best !! My problem is that I live in India and Thai sticky rice is not easily available here. Is there any local Indian rice that I can use as a substitute?? Or can local varieties be tweaked in such a way that I can get a similar taste and texture???

    1. Hi Geeta,

      Unfortunately, we have not come across any of our Indian varieties that have the same sticky texture (not to say that it is not out there). If you ever visit a Thai restaurant in India, maybe you can ask them what they use and where they find it.

I tried it at other restaurants here in Singapore but none came even close to that first taste i had in mind. Although, I am just 12 (well, I will be in a month)and have not decided what type of restaurant I want to open(Indian, Italian, Mexican, etc.).     Thank you very much for this wonderful recipe for Thai Mango and Sticky Rice, it’s one of my favorite desserts. I was wondering if we steam the rice using the steam function of a rice cooker, do we need to flip the rice after ~15 minutes, like you showed in the video or should I put the rice in and take out once it gets completely cooked?

    In addition, I don’t have a large ceramic serving bowl, could I use a large metal mixing bowl or a covered wok or skillet to put the rice and coconut milk mixture in? I noticed how you put the ceramic bowl back into your double boiler so that it would stay warm, could we put our pan, which contains the rice and coconut milk mixture in a slightly warm oven (around 100F)?

    1. Hi Rohan,
      Regarding the rice cooker – use the steam container and the steam function of the rice cooker and it should be ok. I would suggest you let the rice cook for about 25 minutes, take a peak and if it needs to cook more, give it another 5 or 10 min. A lot of times the quality and the age of the rice makes a big difference in cooking time.
      We suggest ceramic bowl because it retains the heat the best, and the rice needs heat and time to absorb the coconut sauce. I would not suggest oven but if you can just keep the bowl warm and air-tight, it should work.

    There is some saying called “Annadata Sukhi Bhava !” I always think of you when i eat the real yummy food.

    Wonder what manners they were thought by her mom and dad.. Possibly she would have never been to a thai place and have tasted such food!!

    great receipe… Whenever I go to Thai restaurant it cost me $5 for just a small dish…. now I can have pleanty of it 🙂 hurray… just one question I see they use Moong dal…. instead of sesame seeds… which gives crunch taste… do you know how I can use moong dal in this receipe… as u guys are expert… would like to take suggestions from you.

    1. Hi Rimjim,

      Sorry we missed your question. The Thai restaurant we frequent does not use mung dal as a garnish. We have heard of mung dal being cooked along with the stick rice to make a porridge but not as a garnish. If I had to guess, I would think that you would have to dry roast the mung dal similar to the sesame seeds to cook it and then use it as a garnish.

    Just thought of sharing my experience..
    My husband dont like sweets.. so i didnt add sugar to this.
    ofcourse i added later for my portion it and i ate with mangoes.
    i just loved it..
    but my husband ate with Indian Mango pickle. even that way it was tasty.

    1. Did you see an apostrophe missing in the second line of your comment? So much for your English writing skills! Yeah, its very easy to complain about others.
      English is just another language that is used in many counties. Standard of education in India does not equal to a foreign language like English writing skills. Education includes many more subjects and can be learnt in any Indian language or a foreign language. I know many great scientists and engineers from different country, who do not speak English well but have enabled people like you and me to have access to greatest technology.
      Bottom line – stop criticizing others, especially when you are not perfect; don’t assume education equals English!

  15. Thanks for the lovely recipe, ladies! I love your website and every single time I’ve tried any of your dishes they have come out just yummy! About a year ago, at 16, when my baby sister started to cook, she found cooking overwhelming and often felt discouraged because none of her dishes ever came out well (never told her this, but they were awful! lol! but no surprise, the girl was just starting out). Anyway, I told her to check out your recipes. She did…she found them so easy and manageable, and the dishes came out so yummy that more than once, my dad thought we had ordered in or that my mom cooked dinner. Your recipes gave her the confidence, and now she loves cooking and is an excellent cook! Keep up the good work and your gorgeous smiles, and try not to let the downers get you down!! Constructive criticism is one thing, meanness is another! Hurt people like to hurt people — I’d waste a couple of seconds feeling sorry for them, and then move on

  17. This sounds very much like Indian dish – Ksheeranna (Ksheera means milk, anna means rice). Its done a little differently but this method looks much easier to make than the traditional way of making ksheeranna. I will keep it in mind.
    Hetal’s son was just looking at the camera instead of eating initially. That was funny and shows how young he is :->)

    Anyway, you guys are doing great! Some advise – Hetal, onething I have learnt at work in the last couple of years is – you do not have to respond to emails and written letters right away! So best thing will be to take a day or two, then decide if you really want to respond back or just ignore such comments. As you guys move ahead, you may see more such comments and not everyone is going to be nice to you. So part of business or working is, learning how to deal with such responses and criticism.

Much as i know that this is purely to do with cooking, a little video on simple fruit/vegetable carving to make the dishes look good would be most appreciated as food is also about presentation as much as it is about eating – you know roses made out of tomatoes at the sides, designs from ripe sliced mangoes and the likes..

Just a point of clarification though – I was a bit surprised when Hetal said that the rice contained gluten – have never heard of rice with gluten…in fact I have friends with Celiac disease, who cannot consume products with gluten, and rice is a key carbohydrate in most of the gluten-free dishes they make. So I looked it up – turns out that it is a
    misleading name “Glutinous rice”, and does not contain any gluten at all – the wiki entry below is a reference, but I looked up several other sites too, to confirm…
