Seitan – Tandoori Style Recipe

Summers, picnics, barbecues… Its the perfect time to grill up some tandoori style seitan. Made from vital wheat gluten, seitan is the answer for vegetarians looking for a great meat substitute. Once the basic seitan recipe is made, you can use it for many different types of dishes. Try this Tandoori Seitan recipe for your next barbecue.

Prep Time: If using prepared Seitan, 5 minutes plus minimum 4 hrs marination time
Cook Time: Few minutes grilling time for each side
Serves: 4

Ingredients:

Prepared Seitan Fillets- from one cup vital wheat gluten (see recipe here)

For the Marinade:

Greek Yogurt – 1 cup (can be substituted with thick yogurt or hung yogurt)
Tandoori Masala – 2 tsp
Salt – to taste
Ginger – 1 Tbsp, minced
Garlic – 1 Tbsp, minced
Green Chilies – to taste, minced
Oil – 1 tsp
Lemon/Lime Juice – to taste

Spray Cooking Oil or Oil – for grilling or pan frying

Method:

1. In a medium mixing bowl, combine all of the ingredients for the marinade and mix well.
2. Gently squeeze excess liquid from Seitan fillets and add fillets to the marinade.
3. Gently mix to evenly coat marinade over Seitan fillets.
4. Cover bowl with a plastic wrap and refrigerate for 4 to 6 hours (overnight if you have the time).
5. Marinated Seitan can be grilled (lightly coat grill with spray cooking oil) or pan fried with a drizzle of oil. Cook both sides until lightly charred.
6. Serve hot with a squeeze of lime or lemon juice.

    I was wondering if you can help, i have recently found your channel on YT and have tried to make your Seitan Tandoori Style meal with no luck, what i have found is that the seitan is VERY chewy like chewing gum (i’m sure i could blow bubbles with it if i tried lol) and the seitan isn’t absorbing the taste in the middle. In the Seitan Tandoori Style video you don’t actually show the seitan being made and ask for the viewers to look at one of your other video’s that show it, i used the Seitan – Veggie Meat video and the measurements you use are Vital Wheat Gluten – 2 cups & Cold Water – 1 3/4 cups and created the dough, i didn’t put any of the other ingredients from that video into the seitan mixture as i thought that wasn’t for the tandoori dish, i did this and then marinated it with your tandoori recipe, the marinade tasted fine its just the seitan that’s the issue, so just to refresh the problem i’m having is the seitan is very chewy and tough and stretchy to pull apart and doesn’t take the marinade throughout the seitan it’s just coating the outside, i left it for a day and a half to marinade

    hope you can tell me where i’m going wrong as it looks amazing in the videos

    if i haven’t described what i’ve done clearly please ask as i’m eager to get this rite

      You should be able to put it into pies as there is moisture but in pastries, it may make the crust soggy.

    also u guys rock.but one question i saw vah chef recipe for tiramisua and yours too….it semmed you both had a meet-up. but a great chef like him was modest to mention it in his video but you guys didnot at all…any specific reason?

  6. The Tandoori Seitan was delish! I broiled it in the oven smothered with the yogurt sauce for about 8 min. (4 min. on each side). The whole family loved! I served it with leftovers potatoes and chickpeas curry and some veggies.

  9. Love this recipe..two quick qns.what brand of tandoori masala is that?can i skip the lime juice and add sour yoghurt?

    1. Does it bother u ? Be a little understanding towards veggie ppl too… H&A have the right to put up what they want. Appreciate the creativity. The same recipe can be used to make some tandoori style boneless chicken.. Look at the bottomline !!!
