My question is regarding boiled eggs. Boiled eggs smell really bad if eaten few hours later, is there a way we can prevent the horrible smell?

YEs…when you boil eggs, after they are boiled, you should immediately immerse them in cold water. this helps in keeping the smell away as it avoids forming the bluish greenish ferrous ring on the yolk which is otherwise formed when you leave them in hot water.

I like this tip. I could have used it 2 weeks ago I ended up substituting soy yogurt for the eggs.
Also I want to ask for a demonstration on how to use the Premier Kitchen machine for wet and dry grinding. I’m interested in purchasing one but would like to see how it’s used first. Maybe put it on your list?
Your website is so well put together and your both naturals at teaching…when can we expect a tv show or a book?

You can find flaxseed (whole or powdered) at most health food stores such as Whole Foods, Sprouts, Central Market, etc.

Yes, you can substitute flaxseed powder for eggs in the ready made boxes. I have personally tried flaxseed powder in a box of brownies and it turned out great. The only thing I would like to mention is that (depending on how fine the powder is), I was able to see little flecks of the powder in the brownies. The taste was great though. You may have an issue with this if you are making a white cake…the flecks will be more prominent.

No, you cannot use flaxseed in seasoning like cumin or mustard seeds. Flaxseed should not be exposed to high temperatures unless it’s a part of a batter (for example). It should not be put into hot oil or toasted.

Great tip…can you please let us know whats the indian name for flaxseed?…and btw..i tried your recipe for paneer tikka (appetizers)…they turned out to be so good…i added a bit of tomato ketchup…and amchoor powder…and a bit rock salt…they add a nice flavour…this time i didn’t use tandoori masala coz of its unavailabilty…next time i’ll use that…and yes the colour of marinated suace wasn’t orange like yours..can you tell me why??…thank you so muchhh…

Hi,
Thanks for the great tip. I wanted to test this tip for long time. Finally bought some flax seeds from local grocery store. powdered them in grinder and basically followed the instructions in baking a cake (readymade mix of betty crocker chocolate fudge)
The result was not as per my expectations. but the saddest part was that the flax seeds had left bitter taste in the cake. I am sure i had made very fine powder if anyone suggest possible reason for error.

We have used this in quite a few recipes (cakes etc) and never had that happen. Flaxseed tends to go rancid if it is old and not stored properly – we think that is what may have happened to yours….

Hi ladies, I thought maybe some of your followers might care to know that flaxseed pwdr is also known as Flaxseed meal. It is found at grocery stores like Kroger etc. Remember to refrigerate it and use it up before it spoils. It doesn’t normally have a long shelf life.
It can also be used in your baking… it is a great substitute for oils etc. I used it many times in muffins with a little yogurt in place of oil.
Note, it does tend to brown your baked goods somewhat, so use it mostly in chocolate cupcakes or bran muffins etc… and oh how it tastes so good in them!

Hi Ladies,
I am finally ready to use flaxseed powder in place of eggs. Even though you were pretty clear, i still want to make sure about the proportions. If a recipe calls for 2 or 3 eggs, do I take 6 tbsp of water for 2 eggs and 9 tbsp of water for 3 eggs? Will this affect the taste of any of the baked product that require eggs or it will taste the same?
Please advice. Thank you.

Hey Pinal,
The proportion is 1 Tbsp of Flax seed powder to 3 Tbsp of water for each egg. A large egg is approximately 4 Tbsp. So yes, to replace two eggs, you need 6 Tbsp of water and 9 Tbsp for 3 eggs. Usually, you will not taste the flax seed but you will see them as they are dark in color. This substitute works great for things like boxed brownie mix or cakes that have a lot of other things going on so you don’t notice the small flecks. It is very noticeable in white cakes. Also, if egg is a primary ingredient in the recipe (example: 3-4 eggs), I would not suggest you use this substitute. You may be better off with a store bought egg replacer.

Thanks for the quick response. This brings me to another question. What is exactly a store bought replacer??? Will the store bought replacer not have eggs at all? I’ve been confused with this because every time I have checked, it was always egg whites that was used as egg replacer….which doesn’t make any sense.

Hi Pinal,
Egg replacer is not made with eggs but has potato starch with other leavening agents. You are probably seeing just plain egg whites in a box (for people trying to control cholesterol and increasing protein in their diets). The benefit of using an egg replacer over flaxseed powder is that the replacer will not have the small flecks visible. I said “boxed” cakes (chocolate) and brownies because they are convenient but you can use it in homemade recipes as well.

If you don’t use them much, they will be better off stored in the refrigerator. If you grind them into a powder, it must be kept in the fridge or freezer because the powder will go rancid very fast.

Flaxseed powder as a substitute for eggs works great in baking recipes. Unfortunately, for things like royal icing that use eggs as a primary ingredient, it does not work.
