Whisk the wet ingredients together in a big mixing bowl
Sugar – 1 1/2 cups
Vegetable oil – 1 cup
Egg – 3
Milk – 1/4 cup
Vanilla – 1 tsp
In a separate bowl, mix all the dry ingredients.
Flour – 2 cups
Baking Soda – 2 tsps
Cinnamon – 2 tsps
Salt – little
Now mix wet and dry ingredients together, don’t need to beat, just mix with spatula.
Add Carrot (grated in food processor) – 4 Big or 6 small
Raisins/Nuts – optional
If the mix is too thick, add some more milk.
Put muffin paper cups in the muffin tray and fill the muffin cups to 3/4 with the mix.
400 degree for 1st 10 min 350 degree for 20 min.
Makes 12 muffins.
