Asparagus Indian Style Subzi

Asparagus is a vegetable that is not usually associated with Indian cooking. The long bright green spears have tender tips while the tough ends are discarded. Asparagus is a nutrient-rich food that in high in Folic Acid and is a good source of potassium, fiber, vitamin B6, vitamins A and C and thiamin. Many people tend to overlook this delicious vegetable due to lack of preparation know-how. Now, you can try fresh and tender Asparagus – the Indian way!

Prep time: 10 min
Cook Time: 10 min
Serves: 4

Ingredients:

Asparagus – 1 lb (approx 1/2kg), chopped into bite size pieces
Oil – 1 Tbsp
Cumin Seeds – 1/2 tsp
Fennel Seed (powdered) – 1/2 tsp
Ginger – 1 tsp, grated or crushed
Garlic – 5 large cloves, roughly chopped
Tomatoes – 2 medium, chopped
Salt – to taste
Red Chili Powder – to taste

Method:

1. Wash the Asparagus and snap the white/hard ends and discard.
2. Chop to desired size.
3. In a skillet, heat Oil on medium heat.
4. Once hot, add Cumin Seeds and allow them to splutter.
5. Add Crushed Fennel Seeds, Ginger and Garlic and cook for a minute.
6. Add Tomatoes allow them to cook until they soften up.
7. Add Asparagus, Salt and Red Chilli Powder. Mix well.
8. Cook uncovered for 5-6 minutes, until the moisture has evaporated.
9. Serve hot with Chapatis, Naan or Rotis.

  6. Thanks for this recipe and other things in video. Here they are:
    — I always looked at Asparagus in stores and thought, we desi should try some Videshi sabji too, but didnt have any idea about Asparagus. Now I know and my desire to cook Videsi Sabji will be satisfied.

    — When you started the video with cut Asparagus, my thought was “Oh no!, I dont know to cut Asparagus and u didnt explain me” but as if you heard my thought and explained it later 🙂

    — Finally, when you put salt and red chilly powder, my first thought was “and what about Haldi”. Again you heard my thought and explained why not Haldi. Lol.
