Serves: 4-5
Ingredients:
Cream of Rice Cereal – 1 cup (found in the cereal aisle)
Ghee/Clarified Butter – 1/4th cup
Water – 3 cups
Jaggery/Gud – 3/4 cup, grated
Salt – pinch
Elaichi (Cardamom) Powder – 1/4 tsp
Nutmeg Powder – 1/4 tsp, optional
Saffron – pinch, optional
Chopped dates or golden raisins – optional
Method:
1. In a pan heat Cream of Rice and Ghee on medium heat till there is a slight color change and a distinct aroma.
2. Transfer into a separate bowl and keep aside.
3. In the same pan, heat Water and add Jaggery to it.
4. Allow it to come to a boil.
5. Add Roasted Cream of Rice slowly. and keep stirring.
5. Lower heat and add Cardamom Power or Nutmeg Powder.
6. Cover and allow it to cook for 2 minutes or till the water has been absorbed.
7. Remove the lid, stir, turn off the flame and add Saffron if desired.
8. Cover again and allow the Halwa to rest for 5 minutes and it’s ready to serve.
For Dairy-Free Version:
1. Use Oil or Dairy-Free Margarine instead of Ghee/Clarified Butter.

Sometimes it is very hard to replicate the texture of eggs but here is our version of Eggless French Toast that just can’t be beat! Try the sweet version for the sweet tooth or the savory one when you are just in the mood for something a little “not so sweet” 🙂 Enjoy!

Makes – approx. 5 slices
Ingredients:
For the Batter:
Besan/ Chickpea flour – 1/2 cup
Rice Flour – 1 tbsp
Baking Soda – 1/8 tsp
Fine Sooji/ Semolina – 2 tbsp
Yogurt – 2 tbsp
Water – 1/2 cup
For Sweet Version:
Sugar -1 tbsp or to taste
Vanilla Extract – 1/2 tsp
For Savory Version:
Salt – to taste
Roasted Cumin Powder – 1/2 tsp
Garam Masala – 1/4 tsp
Black Pepper Powder – to taste
Green Chillies – to taste, finely chopped
Cilantro – to taste, finely chopped
Red Chili Powder – to taste
Oil – for cooking
Bread – 5 slices, cut
Method:
1. Sift the Chickpea Flour with Baking Soda and the Rice Flour.
2. Add Sooji, Yogurt and Water and mix.
3. Mix in the ingredients for either the Sweet Version or the Savory Version.
4. Heat a griddle or a skillet and drizzle a little Oil.
5. Cut Bread Slices and dip in the batter (on both sides).
6. Place on the hot griddle and cook for a couple of minutes.
7. Drizzle a little Oil on the top-side and flip the toast.
8. Allow the Toast to cook on the under-side for a few minutes.
9. Once done, remove and serve hot off the stove.
10. For Sweet Version – serve with powdered sugar or maple syrup.
11. For Savory Version – serve with ketchup or chutney.

You will enjoy making this quick and easy dessert which tastes delicious with whipped cream, or can be enjoyed warm from the oven by those who are allergic to dairy.
Ingredients
3 medium Granny Smith apples, peeled and diced (approx 4 cups chopped)
¼ cup granulated sugar
¼ cup raisins
¼ teaspoon cinnamon powder
¼ teaspoon powdered nutmeg or allspice
3/4 cup orange juice
2 tablespoons cornstarch
1 tablespoon grated orange zest
½ teaspoon vanilla extract (optional)
For the topping–
½ cup rolled oats, lightly pulsed
1/4 cup Rice Flour
1/4 cup Instant Oats Flour
¼ cup brown sugar
¼ teaspoon cinnamon powder
1/8 teaspoon xanthan gum
1/2 stick/ 2oz/ 4 tbsp butter
Method
Preheat oven to 375F (approx 190 C)
Butter 4 eight ounce custard cups (or an 8inch pie dish) and set aside
Combine apples with granulated sugar, orange zest, vanilla extract, cinnamon powder, nutmeg or allspice
Stir in the raisins
Mix 2 tablespoons of cornstarch into the orange juice and pour into apple mixture
Spoon into buttered cups and set aside.
To prepare topping—
Combine Bisquick baking mix, oats, brown sugar and cinnamon powder.
Cut in butter with pastry blender or two knives till mixture resembles coarse meal
Divide mixture into 4 equal portions and sprinkle each apple cup with crumb topping
Bake for 30-35 minutes
Serve warm topped with whipped cream or ice cream.
Dairy free version
Use dairy free margarine instead of butter
Make a simple caramel-orange sauce for a delicious topping—
In a small saucepan, mix 3 tablespoons dark brown sugar into ½ cup orange juice.
Place saucepan on stove-top over medium heat
While the juice mixture is warming, mix 2 level teaspoons cornstarch into ¼ cup orange juice.
Pour into saucepan and keep stirring till mixture thickens and comes to a boil.
Remove from heat.
Let cool for a few minutes.
Serve warm sauce with apple crumble.
Variation-
Add chopped dates instead of raisins
If you don’t have rice flour, use Gluten Free Bisquick instead.
