Puri for Pani Puri

Pani Puri is one of the most loved Indian street foods or “chaat”. The puri (small, round, crispy puffed shells made from semolina) is stuffed with potatoes, chickpeas, tamarind chutney and a spicy, tangy water, or pani. Eat it in one big bite and experience the explosion of flavor. They go fast so be sure to make plenty with this easy pani puri recipe.

Prep Time: 30 mins
Cook Time: 20 mins plus 20 mins bake time

Ingredients: (For approx 40 puris)

Fine Sooji – 1/2 cup
Salt – 1/4 tsp
Baking Powder – 1/8 tsp
Warm Water – 1/4 cup
All-Purpose Flour (Maida) – 1 Tbsp
Oil – 1 tsp
Oil – for deep frying

Method:

1. In a shallow mixing bowl, add Sooji, Salt and Baking Powder. Mix well.
2. Add warm water and soak the sooji.
3. Sprinkle All-Purpose Flour and knead the sooji for 3-4 minutes until smooth and firm.
4. Drizzle 1 tsp Oil and knead again for 3-4 minutes.
5. Wrap dough in a plastic wrap and let it rest for 20 minutes. With 5 minutes left, start to heat oil for deep frying.
6. Divide dough in small bits and roll out each puri or roll a big round and use a cookie cutter or other cutting device to cut round puris. Oiling rolling surface will make rolling easier.
7. Deep fry puris until light golden brown and crisp and remove them onto a paper towel lined baking sheet.
8. Once all puris are fried, remove the paper towel and place baking tray into a preheated (200 degrees F) oven for 25-30 minutes or until all the moisture from the puris is gone.
9. Bring to room temp before storing in an airtight container.

  2. I simply love you guys. You are the best!!! I am studying in ninth grade and I have started to learn cooking. My aunt showed me this website and from then I have become a fan of you both. All the recipes you show are like mind blowing. This one is great. The puris have come out awesome. I have a query: can I put them in the oven right away without frying because deep frying is not preferred by any one at home. Will adding more baking powder help it puff up when put in the oven???

  3. Hi girls, I fell in love with this pani puri since I saw it on TV and tried it twice, not succesfull unfortenely. So I told my sister and showed her your video en we decided to try together. But she accidentally took cornflour instead of semolina. We decided to proceed anyway and guess what? It turned out perfectly, very rich flavour and so crisp it didn’t need to be baked in the oven, we could eat it right away. I will be making it with cornflour from now on, you should try it too!

  5. Hi Hetal… I saw pani puri recipe. I have baking soda not baking powder. Is there any other option that I can use. I appreciate your answer quickly.

    1. Hi Kruti,

      Baking powder has added corn starch which helps the texture. You can try it with plain baking soda, use a little less. You will still have to put them in the oven to crisp up.

I was tried couple of times, for me the hard part is not to make it puff/ball but keeping it hard after fired/cook, I liked the idea you have for using over it works for me, but just wondering Pani Puri sellers on street food in India/Pakistan they don’t have or use any oven for sure. how come they could make crunchy and not soft puri/gol Gappay.

    Also I saw some people mentioned Rice flower, my question is the all purpose flour referring to “Maida” aur “aata” we use for chappati aur roti.

    1. Hi Hm,

      Yes, you do have to heat it but you only keep it pressed for a fraction of a second so that it does not overcook.

  10. Hi! I’ve tried to make puris a lot and the first time it worked, without even putting the puris in the oven. After that one time I couldn’t make them any more because they wouldn’t puff up no matter what I do! I’ve tried your recipe and LOTS of other recipes.. but they still won’t puff up. Someone suggested to me to add a pinch or two of yeast in the dough. Will that work because I don’t want to waste another batch of dough. PLLLLEEASE HELP!! :'(

    Fine soji : 1 cup.

    Rice flour : 1/2 cup.

    salt : 1/2 tsp.

    Warm water : around 1/3 cup.

    oil for deep frying.

    And I used electic tortila maker,so u don’t need to bake in an oven.

    I hope it will work out for u guys too.

    I tried yr other recipes like khaman,suji dhokala,etc.and I love it.

    i m a student and have been trying to make pooris for long time.. i have atleast try it 20 times but soft soft soft soft 🙁 i m pissed offf… i want to learn it… i have got the own but i dont knw how to use that :p sorry but i dont that:( please help me to come out from this situation.. plz plz

    1. Hi Vicky,

      Depending on what type of oven you have, you just turn it on (on bake) and set the temperature. The oven is really the key to make the puri crispy and not soft.

    I tried this recipe but with a variation. Yesterday in the Indian Store I came across Pani Puri Flour. So I used all your ingredients except suji and maida.
    Turned out great. I just had them.

    But the only tough thing I felt was – I could not roll the dough, cut them and fry them simultaneously. So I rolled out all the dough and made all the puris and laid them out on a foil and then fried them all together.

    Most of my puris puffed up but not some. Can you tell me at what point should we try puffing them up after we drop the dough in the oil ?

    1. Hi Nandini,

      If you want to roll out all of the puris, you can keep a damp towel nearby. Roll out the puri and keep them covered with the damp towel. When you are done, uncover a small portion at a time and fry. You can try puffing them as soon as you drop them into the hot oil.

  15. I tried this recipe in this exact manner but I don’t get why the puris don’t puff up they just stay as a patty. Cn you please tell me why this is happening pani puri is my all time favorite chaat and I want it to be made the right way.

    1. Unfortunately, the puffing has a lot to do with how the puri is rolled (should be even)…it does take a bit of practice.

      1. i saw ur video and u guys used a circle shaper can u tell me where i can get one of those and i also noticed that some people use and some people use electric roti makers for their pani puri where can i get one i searched all the indian stores in my city.

        1. You can use a small cookie cutter or a lid with a sharp edge…even a small stainless steel katori (bowl) will work. You can search online for “electric roti maker” or “tortilla maker”.

  17. Ladies – Can I use my Kitchenaid stand mixer with the hook attachment to make a larger quantity of the dough? Usually when we make pani puri for family get-togethers, we make a TON so it would be really nice to save a little energy on the kneading process!

      Honestly, we have never tried a stand mixer to make pani puri dough but somehow don’t think it will work (the process and ingredients are somewhat different than regular dough).

    thnx 4 sharing it with us. Today i have tried them BUT some of Puri where nice big and both Side puff.But mostly they look like a plate noooooooo puff nothing i have tried with lil thin or thick + with lil hot oil but not work at all. Pls help how i can get a perfect result for all puris. I think i have let it rest for to long instaed of 20min for 40 min. Is this the problem? Do i have to put all together + hold them with wet towel?help

    Why we need to add baking soda.
    Why we need to add all purpose flour.
    Why we need to add some oil.
    I have one suggestion for about rolling dough and making puris.
    You can use tortilla maker.

    1. Hi Lali,

      You can just mix boiled potatoes, chana and a lot of spices like chaat masala , red chili powder, coriander leaves, salt. Mix it well and stuff the puris with it.
