Garlic Bread brings this awesome warm feeling of flavor and Italian food. An Italian meal just can’t be complete this wonderful, flavorful and so easy to make addition. Enjoy our favorite part…Garlic Bread!

Prep Time – 5 min
Cook Time – 15 min (including toasting time)

Ingredients:

Bread
Butter
Minced Garlic
Minced Green Chillies (optional)
Salt (if using unsalted Butter)
Dried Oregano

Method:

1. Depending on the bread you have, melt the required amount of Butter in a skillet.
2. Once melted, add in minced Garlic and Green Chillies.
3. Once mixed in add Salt (if you are using Unsalted Butter) and a pinch of dried Oregano.
4. Once the Garlic is cooked and has got a little color, take it off the flame.
5. Slice your bread to desired thickness and brush some of the mixture on it on one side.
6. Toast either in an Oven (350 degrees F until golden, approx 5-6 mins) or a Taster Oven till it is a little browned at the edges.
7. Serve hot with Pasta or Lasagna.

Kadhai Chicken is another one of those signature dishes at Indian restaurants. The Kadhai Chicken has a very unique flavor. The amazing part is that it is not a dish that is overloaded with spices, yet the few that are there just make this one fantastic dish. The flavor and the aroma of the fresh ground coriander seeds is simple yet amazing. A big thank you to Anita Krishnan for this great recipe.

Prep Time:20 min
Cook Time: 20 min
Serves: 4-6
Ingredients:

Skinless Chicken (with or without bones) – 1 1/2 lbs (680 g)
Whole Coriander Seeds – 2 Tbsp
Fenugreek Seeds (Methi) – 1/4 tsp
Oil – 3 Tbsp
Whole Dry Red Chili – 2 or to taste
Onion – 1 large (approx 3/4 lb or 300 g), sliced
Ginger/Garlic – 2 Tbsp, minced
Tomatoes – 2 large (approx 400 g), chopped
Salt – to taste
Red Chili Powder – to taste
Dry Mango Powder (Amchoor) – 1/2 tsp
Garam Masala – 1 tsp
Turmeric Powder – 1/2 tsp
Pureed Tomatoes – 6 Tbsp (from 1/2 large tomato)
Cilantro (Coriander Leaves) – handful, chopped
Bell Pepper (Capsicum) – 1 large (250 g), sliced
Evaporated Milk – 1 to 1 1/2 cups (depending on desired consistency)
Green Chili – 2 or to taste, slit
Ginger – 1 inch piece, julienne for garnishing

Method:

1. Dry roast Dry Red Chili, Coriander Seeds and Fenugreek Seeds on low heat.
2. Roast till they are light golden and there is an awesome aroma.
3. Once done transfer into another dish to stop the cooking process and to allow it to cool down faster.
4. Once cool, coarse grind.
5. In a pan, heat Oil.
6. Add in the onions and allow them to turn brownish but not burnt.
7. Add Ginger and Garlic. Cook for 1-2 minutes.
8. Add in tomatoes, mix and cook for 5-6 min till the tomatoes soften up.
9. Add in the coarsely ground masala and mix.
10. Add in Chicken. Mix.
11. Add Salt, Amchoor, Turmeric Powder & Garam Masala. Mix, cover and cook 10-15 min.
12. Stir in between.
13. Add Tomato Puree and handful of fresh cilantro. Cook for 2 minutes.
14. Add sliced bell-pepper.
15. Reduce heat and add cream or evaporated milk.
16. Allow it to come to a boil.
17. Garnish with slit Green Chili and Julianne Ginger.
18. Serve hot.

Chocolate Burfi is perfect for the Holidays, Parties or as hostess gift! Prep Time: 5 min
Cook Time: 10 min
Setting Time: 2-4 hours
Makes: approx. 30 pcs.

Ingredients:

Instant Dry Milk (Milk Powder) – 5 cups (approx 365 gm)
Heavy Whipping Cream – 1 pint / 473 ml
Powdered Sugar – 1.25 cup (approx 150 gm)
Chocolate Chips – 1/2 cup
Unsweetened Cocoa Powder – 1 tsp

Method:

1. In a deep microwave-safe bowl, mix the following: Instant Dry Milk, Powdered Sugar and Heavy Whipping Cream.
2. Mix very well.
3. Cook in the Microwave for a minute at a time, taking it out everytime and mixing it very well.
4. Ours cooked for 8 minutes.
5. Every microwave is different, look for the mixture fluffing and folding in. Keep and eye on it and make sure it does not spill over. Stop cooking once the mixture is folding in.
6. Mix again and pour 3/4th of the mixture onto a greased (or lines with wax paper) baking pan or thali.
7. Spred and level out the mixture.
8. To the balance of the mixture in the bowl, add in the Cocoa Powder and Chocolate Chips while it’s still hot.
9. Mix till all the powder is mixed in and the Chips have melted.
10. Pour the balance of the mixture to form a top layer.
11. If you want to make swirls, use a butter knife and gently bring the white part of the mixture up to form swirls.
12. Allow the Burfi to set and solidify in the refrigerator (min 2 hrs).
13. Cut into desired shape.
14. Store in the refrigerator and serve at room temperature.

Though not a very commonly used vegetable in Indian cooking, Brussel Sprouts have a certain flavor that is so familiar! Yup, they look a miniature version of a cabbage and the taste is very close to it too. This wonderful and easy dish has got it’s health benefits as well: vitamin A, vitamin C, folic acid and dietary fiber. Try these cute brussel sprouts!

Prep Time: 15 min
Cook Time: 20-25 min
Serves: 4

Ingredients:

Brussel Sprouts – 1 lb (approx 500 gm),quartered
Oil – 1 tbsp
Mustard Seeds – 1/2 tsp
Fenugreek Seeds – 1/4 tsp
Urad Daal – 1 tsp
Asafoetida – 1/4 tsp
Turmeric – 1/4 tsp
Curry Leaves – few
Onion – 1 small (approx 150 g), finely chopped
Tomatoes – 1 med. ( approx 100g), chopped
Sambar Powder – 2 tsp
Salt – to taste
Tomato Sauce – 1/2 cup / 4 oz / 115g
Tamarind Paste – 1/2 tsp
Red Chili Powder – to taste

Method:

1. Heat Oil in a medium size pan on medium heat.
2. Once hot, add the Mustard Seeds and allow them to pop.
3. Add in Fenugreek Seeds and Urad Daal, mix and let the daal turn light golden in color.
4. Add in Asafoetida, Turmeric Powder, Curry Leaves and mix.
5. Right after that add in the Onions and Tomatoes and allow them to soften a bit.
6. Once they are soft, add in the Salt, Red Chili Powder and Sambar Powder and mix.
7. Add in the Tomato Sauce and the Tamarind Paste and allow it to come to a boil.
8. At this time you can also do the taste test.
9. Once the taste test is done, add in the Brussel Sprouts and mix well but gently.
10. Cover and allow them to cook stirring periodically.
11. While stirring if you feel that they are drying up and burning, sprinkle some water, mix, cover and cook.
12. The total cooking time varies because of the size of the pieces or the crop, it may take between 12- 20 minutes to cook.
13. Once done, take off the flame and serve hot.

Tip:

1. Try to buy same size sprouts (goes for vegetable) so that there is even cooking.
2. Remove a layer of leaves from the top and wash before cutting.

SimplyRecipes.com’s Elise Bauer has this very easy recipe for a basic Hummus that we just love! It is great as a dip or spread. Serve with some crakers, pita bread or pita chips or just replace it with butter on toasts! You just can’t go wrong with this. Thanks again, Elise, this one is a keeper!

Ingredients:
Garbanzo Beans – 1, 15 oz can, drained and rinsed
Garlic – 2 cloves, crushed
Tahini (Sesame Seed Paste) – 2 Tbsp (or more to taste)
Salt – 1/4 tsp or to taste
Lemon Juice – 2 Tbsp
Water – 1/4 cup
Olive Oil – 2 Tbsp

Method:
1. Add Garbanzo Beans, Garlic, Tahini, Salt to a food processor or blender.
2. Once roughly ground, add water, lemon juice and olive oil.
3. Blend into a smooth paste, pushing down the sides in the food processor.
4. To serve, spread on a platter and drizzle olive oil, sprinkle chopped parsley and roasted pine nuts.
