Broccoli Quiche is packed with a lot of goodness, all the way from calcium to protein to fiber. Unlike a lot of stuff that’s good for you, this Broccoli Quiche recipe tastes great as well. Perfect for brunches or lunches or just a quick snack, do not underestimate this wonderful dish.
Broccoli Quiche is packed with a lot of goodness, all the way from calcium to protein to fiber. Unlike a lot of stuff that’s good for you, this Broccoli Quiche recipe tastes great as well. Great for brunches or lunches or just a quick snack, do not underestimate this wonderful dish.
Broccoli – 10 to 12 oz, chopped
Oil – 2 tsp
Eggs – 8 large (2 cups)
Shredded Cheese – 1/2 cup (cheddar or jack)
Green Chillies – to taste, finely chopped
Cottage Cheese – 1/2 cup
Salt – to taste
Black Pepper – 1/4 tsp
Green Onions – 1 stalk, chopped
Method:
1. Pre-heat the oven to 350 degrees F(approx 180 degrees C)
2. In a medium size pan, add in the Oil and heat on medium heat.
3. Once hot, add in the Onions and allow them to get translucent.
4. Meanwhile, lightly coat a 9″ pie dish with some cooking oil.
5. Once the Onions are done, add in the Green Chillies, Spring Onions and Broccoli.
6. Cook for about 3 minutes, till the Broccoli is about half the way cooked.
7. Transfer to the pie dish.
8. Break the Eggs in a mixing bowl and add in Salt and Pepper to tast.
9. Add in the Shredded and Cottage Cheese and mix well.
10. Pour this mixture in the pie dish over the Broccoli.
11. Bake for 45-50 minutes.
12. The best way to tell is to see if the edges have left the side and the top is golden.
13. Once out of the oven, allow it to rest for about 5-7 minutes and then slice and serve.
Tips:
1. Add in other vegetables like Cauliflower, carrots, Spinach etc for a change.
2. Drip a little bit of egg mixture on a hot pan and allow it to cook, then taste to check salt and pepper.
3. Serve with Ketchup, Chutney, Salsa or Tabasco.

Prep Time: 10 min
Cook Time: 15 min
Serves – 4
Ingredients:
Tuna – 2, 6oz cans (packed in water)
Oil – 1 Tbsp
Onions – 1 medium, chopped
Ginger – 1 Tbsp, minced
Garlic – 1 Tbsp, minced
Tomatoes – 2 medium, chopped
Green Chilli – to taste
Red Chili Powder – 1/2 tsp or to taste
Tandoori Masala – 1 tsp
Coriander Powder – 1/2 tsp
Cumin Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Salt – to taste
Cilantro – 15 sprigs, finely chopped
Lime/Lemon Juice – 1 Tbsp or to taste
Method:
1. Heat the Oil on medium flame in a wok-type pan.
2. Once hot, add in the Onions and allow them to get translucent.
3. Once done, add in the Ginger, Garlic and the Green Chillies.
4. Allow it to some more till the Onions get some color on them.
5. Reduce flame and add in the Turmeric Powder, Coriander Powder, Cumin Powder, Red Chili Powder and the Tandoori Masala.
6. Mix well and cook for 30-40 seconds.
7. Add in Tomatoes.
8. Add in the Tuna, which has been drained and squeezed. Open it up with a fork or fingers.
9. Mix and add salt.
10. Cover and cook for 5 min, allow the Tuna to get hot and the Tomatoes to soften up a bit.
11. Stir in between.
12. Add in the Cilantro and Lime/Lemon Juice and mix well.
13. Serve hot with Chapatis, Parathas or Nan.
Tips:
1. This is a great item for stuff in different things, from sandwiches to Parathas.

One curry recipe that stands out from the bunch is the famous Mirchi Ka Salan recipe from Hyderabad (capital city of Andhra). Whole green chilies are pan-fried and simmered in a flavorful sesame seed and peanut sauce. The dish is easy to prepare and has a refreshingly pleasing taste. Recipe submitted by Prachi from Germany.

Ingredients:
Mirchi (Jalapeno Peppers or other mild chili) – 1 lb (500 g) – slit on one side and deseeded
Dry Red Chili – 1
Whole Cloves – 2
Cinnamon Stick – 1″ piece
Cumin Seeds – 1 tsp
Coriander Seeds – 1 tsp
Roasted Peanuts – 1/2 cup
Sesame Seeds – 1/4 cup, toasted
Oil – 1 tsp
Onion – 1 small, chopped
Ginger – 1″ piece
Garlic – 3 cloves
Tamarind Concentrate – 1 tsp or to taste
Water – approx 2 cups
Oil – 1 Tbsp
Turmeric Powder – 1/4 tsp
Red Chili Powder – to taste
Salt – to taste
Jaggery or Sugar – to taste (optional for balanced flavor)
Method:
1. In a heavy bottom skillet, dry roast Dry Red Chili, Cloves, Cinnamon Stick, Cumin Seeds and Coriander Seeds until fragrant. Keep aside.
2. In the same pan, toast Sesame Seeds until light golden. Keep aside.
3. In the same pan, dry roast Peanuts and remove skins (or use bottled dry roasted peanuts, salted or unsalted). Keep aside.
4. In the same pan, heat 1 tsp Oil and saute Onions until golden brown.
5. Blend into a smooth paste all ingredients from #1, #2, #3, #4, Ginger, Garlic and Tamarind Paste using 1 cup water (a little at a time).
6. In a non-stick pan, heat 1 Tbsp Oil.
7. Add Jalapenos and roast them until the skins are sand colored.
8. Add blended paste plus remaining 1 cup Water to the pan.
9. Add Turmeric Powder, Salt, Red Chili Powder and Jaggery. Mix well, cover and cook for 15 – 20 minutes. Stir in between.
10. Serve with Biryani, Chapati or plain white rice.

Prep Time: 30 min
Cook Time: 2-3 min each dosa
Makes: 10-12 dosas
Ingredients:
Whole Wheat Flour – 1 cup
Rice Flour – 1/4 cup
Powdered Jaggery – 1 cup or to taste
Water – 1.75 cups
Elaichi Powder/Cardamom Powder – 1/4 tsp
Oil – for pan frying
Method:
1. Dissolve the Jaggery in 1 cup of water.
2. Once it’s all dissolved, allow it to cool down to room temperature.
3. In a mixing bowl, add the following: Wheat Flour, Cardamom Powder, Rice Flour and mix well.
3. Sieve the Jaggery Water into the Bowl and mix well dissolving all the lumps.
4. Use a hand blender if needed.
5. Add balance of the Water if needed and mix.
6. Heat the Dosa Tawa well.
7. Add a spoonful of batter on the Tawa and spread it in circular motion outwards.
8. Drizzle some Oil on the dosa and allow it to cook on the bottom-side.
9. Once done, loosen the edges and flip it.
10. Allow it to cook on this side as well.
11. Take off the tawa and serve hot!
Kitchen Odors can be very strong, especially so with ethnic foods. Even for people who are used to cooking at home, they can be very embarrassing at times. Even so, we love our ethnic food and can’t be satisfied by any other kind. In order for us to cook and eat what we like, here are some ways from Show Me The Curry to help mask and remove some of the odors (or aromas, if you like)!
Method:
Tip # 1:
Take the skin of an orange and lay it flat in am oven tray.
Stick it in a pre-heated (at 350 degrees F or approx 180 degrees C) oven.
Leave a little crack open in the door and allow the citrus aroma to take over the kitchen ordors.
Tip # 2:
In a pan, add in a few cloves and equal parts water and White Vinegar.
Allow it to come to a boil and then reduce to a simmer and let it go for a while.
Keep an eye on it to make sure it does not all evaporate and burn the pan.

In a pan, add in a sliced apple, 1″ piece of cinnamon stick and equal parts of water and white vinegar.
