Try this amazingly quick substitute for Tamarind Chutney using Apple Butter. For those unfamiliar with Apple Butter, it is similar to apple sauce but has a richer flavor and smoother texture. For apple sauce, apples are cooked quickly and pureed. For apple butter, apples are slow cooked (sometimes for 8 to 10 hours) until caramelized. The longer cooking time plus added spices like cinnamon enhance the flavor and give apple butter a darker color. Serves: 1
Ingredients:
Tomato Juice – 1 can
Tamarind Paste – 1 tsp
Worcestershire Sauce – 1 tsp
Chaat Masala – 1/2 tsp
Tabasco – few dashes or to taste
Salt – to taste
Lime Juice – to taste
Vodka – a shot to spike it (optional)
Ice Cubes – as needed
Celery Stick – for garnish
Method:
1. In the Tomato Juice, mix in the Tamarind, Chaat Masala, Worcestershire Sauce, Salt and Tabasco. Add Vodka.
2. Mix well. Adjust seasonings and flavors.
3. Top up with Ice Cubes.
4. Garnish with a Celery Stick.
