Tahini Paste and Tahini Sauce Recipes

Tahini Paste and Sauce are a staple in Mediterranean Cuisine. Every region has a twist and different uses – all the way from using it as a spread, garnish, or a dip, to using it in the cooking. Makes:
Tahini Paste – 1/2 cup
Tahini Sauce – 1 cup

Tahini Paste:

Ingredients:
White Sesame Seeds – 1/2 cup
Olive Oil – 1/4 cup + 2tbsp (if storing for a longer time)

Method:
1. Pre-heat oven to 180 degrees C / 350 degrees F.
2. Spread the Sesame Seeds evenly onto a baking sheet.
3. Bake for 5-10 minutes till you start to see the Seeds glisten.
4. Keep shifting the Seeds every 1-2 minutes, to avoid burning the Seeds.
5. Once done, remove and allow to cool totally.
6. Transfer into a Blender or a Food-Processor, add in the Olive Oil and blend into a smooth mixture.
7. Pour into a jar or a bottle and use as needed.
8. Add an extra 2 tbsp Olive Oil if storing for a long time.
9. Store in the fridge for 3-4 weeks, in a clean dry bottle.
10. Mix well before using.

Tahini Sauce:

Ingredients:
Tahini Paste – 1/2 cup
Garlic Cloves – 2-4
Olive Oil – 1 tbsp
Lime/Lemon Juice – 2 tbsp
Salt – 1/2 tsp or to taste
Water – 1/2 cup or as needed
Flat Leaf Parsley – 2-3 sprigs, finely chopped

Method:
1. In a blender, mix in the Tahini Paste, Garlic, Olive Oil, Lime/Lemon Juice, Salt.
2. Blend well and add in a little Water at a time.
3. The Sauce needs to be of a ‘pouring – dip’ consistency.
4. Check the flavors and adjust as needed.
5. Add in some fresh chopped Parsley and mix.
6. Serve as a dip with Pitas, Felafels or as a dressing.
