Wow!  We have never had an eggplant burst in the oven :(.  Poking would be okay but a lot of the juices may come out.  Maybe just a few pokes on the top?</description>

Love the recipe and shortcuts and have made this numerous miss.However last couple of times while roasting the eggplant in the oven it burst and splattered all around. Would poking it with a fork before roasting help?Not sure why it happened ..could be too much water in the eggplant?</description>
