If you’re in the mood for something savory, spicy (or not), satisfying and quick, look no further. Try this delicious Makai no Chevdo recipe (Corn Chevda) as a quick snack or lunch idea. Don’t let the name “Chevda” fool you. This is no dry namkeen tea time snack made from corn flakes. It is a creamy and yummy meal.
Prep Time: 5 minutes
Cook Time: 10 minutes
Serves: 2
Ingredients:
Oil – 1 tsp
Mustard Seeds – 1/2 tsp
Dry Red Chilies – 1 to 2
Curry Leaves – few
Asafoetida – 1/8 tsp
Green Chilies – to taste, chopped
Frozen Corn – 12 oz (2 cups), defrosted and roughly food processed or crushed
Salt – to taste
Milk – 1/2 cup
Sugar – 1 tsp
Lemon/Lime Juice – to taste
Cilantro (Coriander) – 5 sprigs, chopped
Shredded Coconut – 1 to 2 Tbsp
Method:
1. Heat Oil in medium non-stick pan.
2. Add Mustard Seeds and allow them to pop.
3. Add Dry Red Chilies, Curry Leaves, Asafoetida, Green Chilies, Corn and mix.
4. Add Salt, Sugar and Milk. Mix well, cover and cook for 5 minutes. Stir in between to prevent sticking.
5. Uncover and cook until most of the the liquid evaporates (2-3 minutes).
6. Switch off stove and add Lemon/Lime Juice and mix.
7. Garnish with Cilantro and Shredded Coconut and serve hot.
Tip: To make it “chaat” like, try topping it with chopped onions and sev.

While this is a quick version of making this dish, the traditional way of making is to grate fresh corn and believe me if you make this in the peak of corn season – summer with fresh corn, you will taste ALL the difference.

You are adding milk and lemom juice. Generally I have not heard any dish with both of them, unless you want to separate the milk solids. I make the same without milk. Anyway, I will try adding milk next time and see how it comes out.

) although I have made it several times i like to see your videos to see if you have any interesting variation. Sometimes we make Pakoda from leftover Chevda. Just add some plain flour and deep fry it.It’s perfect for tea time snack.

I tried this recipe. Came out good … But … the corn that I used was tinned and its always a bit sweeter .. infact even the fresh corns that are available here are sweet corns … so I didn’t add the sugar as mentioned… and yet it was more “sweetish” inspite of adding more spice… is that how its supposed to be????
But anyways thanks for an easy and quick recipe …

am a big fan of u guys n have tried quite a few of ur recipes at home n have worked out really really well, so thank you for that!!
but makai no chevdo is something thats one of my favorites i would like you to try a few modifications from ur recipe.. this is how my mom makes it and its amazing amazing amazing (cant say it enough no. of times!) and simpler..
1. she crushes half of the boiled corn and keeps the rest whole
2. no milk/ cream <well, this recipe is for the ones who like it crispy n tangy rather than khichdi-like or sweet)
3. add thin Sev
here's how:
heat oil in a pan.. add mustard seeds n allow popping .. add only a 2-3 curry leaves (i dont put any in mine) .. then add green chilli- ginger paste.. add the mashed corn, mix.. add the whole corn, mix.. add salt, sugar, lemon.. allow a couple of mins to cook n turn off the stove.. add sev (i add lots of it!).. garnish wid our favorite lil grean leaves, coriander.. and server hot n crisp.. (i suggest u add sev only before serving or else it loses the crisp..)
now i m not a person who uses measurements while cooking.. everything's "to taste" for me.. but im sure u can figure that out..

Tried this recipe when I was really craving a quick snack. And also tweaked it a little bit by adding half a teaspoon of chilly powder and grating some parmesan cheese on it at the end to make it a little bit more creamy.
