This fantastic, light and refreshing dessert is a perfect way to get to someone’s heart! Easy to make with a million dollar look is dressed to impress. It is a great dessert that is a great combination and so easy to put together – for a small get-together or for a big bash!
Ingredients:
Strawberries – 4 cups
All Purpose Flour (Maida) – 1.75 cups
Sugar – 1/4 cup
Salt – 1/2 tsp
Baking Powder – 1 tbsp
Cold Unsalted Butter – 1 stick/1/2 cup/8 tbsp
Heavy Cream – 1/4 cup + 1/3 cup
Vanilla Essence – 1 tsp
Additional Flour for dusting
Additional Heavy Cream – for brushing
Additional Sugar – for sprinkling
Strawberries – 4 cups
Sugar – 3 tbsp
Whipped Cream – Store bought or Homemade
Method:
For the Shortcake:
1. Combine the All Purpose Flour, Sugar, Salt, Baking Powder in a bowl.
2. Cut the Cold Unsalted Butter into little cubes.
3. Mix into the All Purpose Flour mixture.
4. Combine the Butter into the Flour with help of a pastry knife or 2 butter knives till all the butter combines in well forming crumbs.
5. Form a well in the flour and pour the Heavy Cream and Vanilla Essence into it.
6. Gently fold in the Flour and combine the dry and wet ingredients.
7. Using your hands, knead gently (do not over knead) till t comes together to form a dough.
8. Dust the surface area with some additional Flour and place the dough to form into desired shape.
9. Roll out into 3/4″ thick, cut with cookie cutter to form cute shapes or use a knife to form rectangles or squares.
10. Pre-heat oven to 425 degrees F or 220 degrees C.
11. Place the cut dough onto parchment paper or foil (lightly greased) about 1-2″ apart.
12. Take some additional Heavy Cream and brush with a pastry brush over the Shortcake.
13. Sprinkle some sure over the top of the Shortcakes.
14. Bake in the center of the oven for 12-15 minutes till the tops are light golden.
15. Once out of the oven, allow to stand for 5 minutes. Transfer to a cooling rack and allow to cool completely.
For the Strawberries:
1. Wash and pat fry the Strawberries.
2. Hull the Strawberries.
3. Cut 1 cup of Strawberry into small pieces and place in a bowl.
4. Using a fork (or a potato masher), gently smash them to form a semi-liquid.
5. Add Sugar and allow it to dissolve.
6. Slice the balance of the Strawberries and add to the bowl (mashed Strawberries and Sugar)
7. Mix and refrigerate till ready to use.
Assembly:
1. Once the Shortcakes are totally cooled down, slice them through the center horizontally.
2. Open the Shortcake and spoon about 1/2 a cup of Strawberry onto the bottom part.
3. Put a dollop or Whipped Cream on top and close with the top of the Shortcake, forming a sandwich.
4. Chop some fresh Mint Leaves and sprinkle on top.
5. Serve.
Tips:
1. Make a big batch of Shortbread and refrigerate or freeze.
2. Use alternate fruits or a combination of fruits like Blueberries, peaches, nectarines, raspberries, bananas.

Hi Hetal and Anuja,
Looks lovely. One feedback, I read the recipe and watched the video noticed a discrepancy. The written recipe does not include the heavy whipping cream 1/4 cup + 1/3 cup that you add in the shortcake dough. Also the vanilla essence is not mentioned in the written recipe. Not sure if it was left by mistake. Thought of informing you guys. Will give this recipe a shot soon.

You can keep them in the fridge for up to a week. We have not tried to freeze them so cannot give you an accurate time…sorry.

My co-worker would bring me the veggie ones which would include cheese and jalapeno, very spicy and delicious. There are some just with cheese or some with different types of veggies cut into sticks.

I made the strawberry shortcakes.I am eating it right now as I am at the computer….:) These are so yummy and so perfect. I have to have seconds after I am done with this one. It is not too sweet, which is how I like it. I sprinkled some icing sugar as a garnish since I had no mint. Thank you both for this fabulous recipe. Strawberries are my favorite fruit too.

I made the strawberry shortcakes and I am eating it at the computer right now……:). These are so yummy and so perfect. I have to have seconds when I am done. You are also right about it not being too sweet. That is how I like it. I didn’t have mint leaves left (I gave them to my bunnies earlier) so I used icing sugar to garnish and it looked pretty too. I tried this recipe and I was faced with MULTIPLE problems, first my dough wouldn’t knead. It was way too dry and I had to end up adding water for it to form some sort of shape. Then I took out the pastries in 15 minutes as mentioned but it was still undercooked. So I popped them back in and took it out in 25 and it was overcooked! Now I am left with tough short breads and they aren’t flaky as they are supposed to be. Nevertheless I can’t stop eating them. True to their description, they are tasty and not sweet at all (which is why it is a must to have them along something sweet) but if they had turned out flaky, they would’ve been a knockout. Right now I am left wondering what to do with the rest since I can’t serve them to my guests anymore.

Sorry to hear that…
Sometimes, the way you measure ingredients affects the final outcome – especially with flour. Also, different ovens work differently and some even have hot and cold spots inside
. Hopefully, if you try it again, you may be able to adjust these problems.

i tried this recipe but mine was not in good shape…it was too hard..you guys cut the one piece of your shortcake in two pieces…mine was like cookies…i don’t know..what went wrong…could you guys plz suggest me about this …:( i really want to make this …..everything looked perfect ..perfect dough like you guys…i also kept that dough in refrigerator before putting that into oven…but

Hi Shraddha,
Welcome to SMTC! There are recipes out there that use yogurt and milk for shortcake, but we have not tried it in this particular recipe. Bottom line: It can be done, but the proportions may change. For example, milk will be thinner than yogurt or heavy cream.

I made the shortcakes and added cold milk instead of cream.. Added 120ml of milk. N they turned out fabulous.. N hey i think you meant 1tsp of bakin powder, not 1tbs… Thanks fr a keeper recipe:)..

We’re glad plain milk worked for you. Thanks for posting your feedback for others as well. We did mean 1 Tbsp of Baking Powder. Since it is a shortbread, it needs more baking powder for the flakiness.
