Dry Fruit Rolls – Indian Sweet Recipe

Nidhi Raj from SoulAndSpiceBox.com was a guest at our show and shared this wonderful recipe with us. It is easy, quick and a sweet, what more could we want for the festivals coming up! We loved this recipe because it’s there is no added sugar and the sweetness comes from the Dates, which are technically good for you hence making this a “Healthy Sweet”. Thank you Nidhi for sharing Dry Fruit Rolls Recipe with us and we wish you lots of success. Please don’t forget to visit her page SoulAndSpiceBox.com.

Prep Time: 10 min
Cooking Time: 20 min
Cooling Time: 2-3 hours
Serves20-30 pieces

Ingredients:

Dates (Khajoor) – 3/4 cup, chopped
Dry Figs (Anjeer) – 1/4 cup, chopped
Walnuts (Akhrot) – 1/4 cup
Cashew Nuts (Kaju) – 1/4 cup
Blanched Almonds (Badam) – 1/4 cup
Ghee- 1 tbsp
Pistachios (Pista) – 3 tbsp, chopped, for garnish

Method:

1. Chop all the dry fruits into small pieces. If you are using dates with seeds, make sure you take them out and discard them
2. Take a heavy bottomed pan or kadhai, and heat the ghee on medium heat.
3. Add the Dates first and stir it for 1-2 minutes. Cook a little longer if using fresh Dates.
4. Add in the Figs and incorporate into the Dates mixture.
5. Cook for 2-3 minutes.
6. Add Almonds, Cashew Nuts and Walnuts and mix well.
7. Keep the heat to the lowest possible setting and keep mixing the dry fruits till they are well incorporated.
8. Turn off the heat after 2-3 minutes and transfer into a platter and let the mixture cool down.
9. Once its cool enough to handle, rub some Ghee on your hands and divide the mixture into two.
10. Shape the mixture into 2 cylinders, while pressing it firmly.
11. Once the roll is made, take a plate and spread out the chopped Pistachios.
12. Roll the mixture on the chopped Pistachios while pressing lightly.
13. Once the garnishing is done, roll the mixture tightly in an aluminum foil or plastic wrap and secure both ends firmly.
14. Refrigerate this for 3-4 hours and them into ½ inch pieces.

Tips:
1. Use different nuts – Pecans, hazelnuts, pine nuts
2. Use Poppy Seeds as a variation instead of Pistachios.

  1. Hey Nidhi
Lovely seeing and hearing you here on Show me the Curry with Anuja 🙂
Anuja and Hetal are both wonderful hosts, have seen quite a few of their videos.
They are doing a fantastic job, and now you too, so comfortable, so confident!
The recipe looks nice and simple, and yet good enough to present in a platter, this festive season.
    Great going.
