Chocolate Chip and Walnut Cookies

For Mother’s Day, kids love to “surprise” moms with homemade treats from the heart. Here is an easy cookie recipe for your kids to try out and impress Mom on her special day. Older kids can do it “all by themselves” and little ones can spend precious “mommy time” bonding. If you don’t have kids, don’t worry…its one scrumptious cookie that you just have to try!

Prep Time: 10 mins plus 30 mins chilling time
Bake Time: 13 – 15 mins
Makes: 20-24 cookies

Ingredients:

All-Purpose Flour – 2 cups
Baking Soda – 1/2 tsp
Salt – 1/4 tsp
Quick Oats (uncooked) – 1 cup
Butter – 2 sticks (1 cup ), softened
Sugar – 1/2 cup
Brown sugar – 3/4 cup
Eggs – 2 large
Vanilla – 1 tsp
Lemon Juice – 1 tsp
Chocolate Chips – 2 cups (approx 12 oz)
Walnuts – 1 cup, chopped

Method:

1. In a mixing bowl, combine Flour, Oats, Baking Soda and Salt.
2. In a separate mixing bowl, cream together softened Butter, Sugar and Brown Sugar with a hand mixer (approx 2 minutes).
3. Add one Egg and beat into the mixture.
4. Add second Egg and continue to beat until incorporated.
5. Add Vanilla and Lemon Juice and mix well.
6. Add dry ingredients into the wet ingredients, a little at a time while mixing.
7. Fold in Chocolate Chips and Walnuts.
8. Chill cookie dough in the refrigerator for approx 30 minutes.
9. Preheat oven to 375 degrees Fahrenheit.
10. Line baking tray with parchment paper or lightly grease.
11. Using an ice cream scoop, drop portions of cookie dough onto the tray leaving ample space between the cookies (approx 6 cookies per 9 x 13 tray).
12. Bake 13 – 15 minutes until cookies appear golden brown.
13. Cool cookies on the tray for 5 minutes, then transfer them to a cooling rack and cool completely.
14. Store in an air-tight container at room temperature for up to 2 weeks.

      You would have to use a little more baking powder than soda because the powder contains baking soda plus other ingredients.

      1 cup sifted all purpose flour (maida) = 115 grams approx

      We have not personally tried any store bought egg substitutes. Many of them will probably work for this recipe, it’s just that we have not tried them to give an accurate account.

    I made some of the Indian sweets and fruit cake and sent it to my Mom and my relatives in India.. well..they thought the sweets were store bought… and my mom was on cloud 9 LOL..:)

Sometimes when I am stressed, I just watch some of their videos for relaxation. Many times watching their video is like bonding time with my daughter.

      You can try to substitute with flaxseed powder (2 Tbsp) mixed with water (6 Tbsp) as someone else has mentioned. We have not tried it in this recipe to be able to give you an accurate account.

      Some things to consider when buying a food processor:

      1. The size – if you have a big family or entertain a lot, try to get one that has a larger capacity.

      2. The attachments – many people use a food processor only to chop and don’t need all the fancy blades. If you plan to use it for more than chopping (ex: shredding, kneading dough, etc), look for one with many attachments.

      3. The power of the motor – bigger wattage is always better in this case so you are able to handle large loads without having to worry about the motor going out.

      4. The price – this is the final consideration as you will see the crazy range of prices.

      Once you have one particular model in mind, read online reviews for potential problems.

    Great recipe, can’t wait to try it even though it has crazy amount of butter. But than butter makes everything better, even it it’s for a short while. lol.

    I love the idea of kids presenting kid friendly recipes. It should be moticator for other parents to get their kids involved in some form of cooking. Please don’t get discouraged by anyone making negative remarks about you or your children. I think it very immature and rude to complement ones’ child(ren) and not complement the other that are also in the video!!! It’s almost like you’re making a negative comment by not saying anything about the other child.

    This show wouldn’t be the same if both Hetal and Anuja had the same personality. However the are equally nice and share the responsibility of making every video.

  12. Is there any difference between Instant oats and quick oats?? If so which is better to use for baking? And yes among others I am also waiting for eggless cookies because my mom doesn’t eat eggs.

    Also, I want to say it’s very good that you guys make videos with kids. It’s a great way to involve kids and seems like they actually had fun doing this, thus maybe I should try cooking with my kids as well.

    1. Thanks Ami! We mistakenly assumed that both were the same and said “instant”, however after some research, we found that quick oats need to be cooked whereas instant oats just need hot water. We used Quick Oats for this recipe. Thanks for asking a great question! 🙂

  17. Nice video! Instead of using too much butter, you can use canola oil and a little bit of butter. That way you can still get the butter flavor without getting too much saturated fat. Anyway, you’re kids are very fun to watch.

      We have not tried this recipe without eggs or with a substitute. We have some eggless cookie recipes coming up.

  22. too much butter in this recipe…….its sure to goto “mommy’s” hips and what not. I prefer to make cookies without ANY butter and they taste devine.

Every video people have lots of queries and they put up their queries but without any response. There are people who log on to ur site day and night even after knowing that there won’t be any new video and you don’t seem to respect ur viewers. Anuja had asked Abby to be respectful and sensitive but what r u doing? It is understood that u guys are doing a great job and it takes lot of pain, time, patience and money to put up one video but all this is worth at the end of the day for both parties (u and viewers) so pls answer the queries.

      Regarding your question: Oats play an important part in this cookie recipe for their chewy characteristic. You will not get the right texture if you simply add more flour. Also, in baking, if you change one ingredient, you may have to adjust others as well.

      We have not experimented with an eggless version of this recipe but we do have some eggless cookie recipes on the way.

      The problem with baking versus cooking is that baking is a science and the recipe is a formula. Any changes to the recipe (even slight ones) may adversely affect the outcome. Flaxseed powder works great in some instances but the less you have to use, the better because it has a grainy look and feel. There are many things you can substitute for the eggs: applesauce, banana, a mixture of oil, water and baking soda, etc. Unfortunately, it is not an easy substitute and the entire recipe may need to be re-adjusted.

      We try to offer many eggless recipes to our viewers who are pure vegetarian. Some recipes work really well with eggs and we show them for the benefit of everyone that can use them. We are always asked “what can we substitute for eggs” but sadly, it is not an easy answer without having to show 2 different recipes.

      1. I have tried a similar recipe with flaxseed meal and came out very well! A tip to keep the cookies soft in dry places like colorado… stick a slice of fresh bread in the container the moistness in the bread keeps the cookies soft and doesnt allow them to harden 🙂
