Biscuit Cake

Looking for an easy cake recipe that is no bake, so no oven and no eggs! Is this possible? You can please the vegetarians in your life while you enjoy your cool kitchen in the hot summer with this delicious and innovative Biscuit Cake. You will probably have to fight the kids off just because you want it all to yourself. How do we know? Well, we’ve been there and done that! The only thing you need is patience — just enough to make it and allow it to chill before you dig into it. It’s another perfect make ahead cake or dessert option for a party.

Ingredients:

Biscuits – 5-7 small pkts (account for broken ones)
Unsalted Butter – 2 tsp
Chocolate Powder – 2 tbsp
Unsweetened Cocoa Powder – 1 tsp
Instant Coffee Powder – 1.5 tsp (optional)
Cornstarch – 2 tbsp
Sugar – 2 tbsp
Milk – 2+1 cups
Chopped Walnuts – 1/4 cup

Method:

1. Mix the Cornstarch with 1/2 cup of milk (from the 2 cups).
2. In a heavy-bottomed pan on low flame, add in the balance of the 2 cups of Milk.
3. Add in the Chocolate Powder, Cocoa Powder, Sugar and Butter.
4. Bring the Milk to a boil.
5. Add in Instant Coffee Powder and allow it to mix in well.
6. Add in the diluted Cornstarch.
7. Stir constantly, once the mixture starts thickening, take it off the flame.
8. Keep stirring to make sure it is a smooth with no major lumps. Use a whisk or a hand blender if needed.
9. Set aside and allow it to cool down to room temperature.
10.Now for the assembly of the cake, open the packets of biscuits and take out the broken ones.
11.Take the biscuit and give it a quick dip in the Milk (1 cup) and start layering on the platter.
12.Lay out the 1st layer of biscuit and then spread some syrup/sauce over it.
13.Alternate with a layer of Biscuits and Sauce…till you reach a desired height.
14.Cover the top most layer with the balance of the Syrup and some on the sides.
15. Sprinkle with chopped Walnuts and chill in the refrigerator for 2 hours.
16. Slice like you would for a cake and serve.
17.Serves 8.

Tips:

1. Buy a few extra biscuit packets…they taste yummy and you will end up eating a lot more than you think.
2. We have tried a lot of different kinds of biscuits…Parle G workout best. They are available at any Indian Grocery store.
3. The moment you see the sauce thicken, take it off the flame and keep stirring.
4. Have patience and let the syrup get to room temperature…otherwise the biscuits will end up being soggy.
5. If you like thicker syrup, add another 1/2 tbsp of Cornstarch.
6. The layering needs some careful handiwork…do it slowly and don’t be in a rush.
7.You can sprinkle the top with coconut powder, sprinkles, assorted dry fruits and/or chocolate syrup.

      Yes, in many places corn starch is referred to as cornflour. Corn meal is different…it is ground corn kernels.

    I just have one question for all the cake recipes that use butter. We live in India and its difficult here to get unsalted butter. In Fact i have never found it anywhere. amul has a range of unsalted butter but no shopkeeper seems to have it. What is the substitute for that? some times i have tried the salted one and added extra sugar but than amul butter any ways is way too greasy. cake looks very greasy and butter ooze out of the cake. pls help me solve the problem. Is it ok if i do not use the buter at all in any of my cake from now…And add mfull cream milk instead?

    1. Hi Shilpi,

      You can use salted butter instead of unsalted. Most of the time, cake recipes call for a little bit of salt anyway. You can just leave the salt out or reduce it when using salted butter. Full cream milk will not have as much fat content as butter so it may not be the best choice, but we have not tried it personally.

    1. Hi Sushma,

      Sorry, but we have never tried this recipe with digestive biscuits. If you decide to try it, please make sure that it is alright for the children to eat the biscuits in big quantities and not get upset stomachs.

      Really? Here in the US, it is commonly used for most baking and is readily available right next to the salted butter.

  7. Hi there, can’t we use cream whipped or normal cream instead of milk for this recipe? And mariegold biscuit instead of parle g. Can you suggest some more biscuit companies?

    1. Hi Deepali,
      Some of our viewers said that they did use Marie Biscuits but we have never tried it. We are pretty sure it will work…
      Regarding the substituting the milk in the sauce, again we have have never tried it but it should work and you might have to be very careful, that the sauce does not get too thick.

      This is a delicate cake – but you did not mention 45 what? 45 minutes – it’ll survive. Anything more, probably not in the heat. You can put it in an ice chest…

    i must say this recipe is very easy,takes less time and tastes awesome..i tried it few days back..i topped it up with walnuts and desiccated coconut…though my syrup was not as thick as shown in ur video but it turned out fine. it was very soft but at the same time stable..

    1. Hi Tejashree,

      We have not come across a really good microwave cake recipe as of yet. We are stilling experimenting with some and will post if we get it right :).

      We have not tried it that way, but it should work. The corn starch is added to thicken the sauce. The custard powder will do the same.

  14. I have just finished my plate of biscuitcake,It was really good!It is very simple to make,which is nice.
    I had to buy the parle G biscuits from another country,-I live in the Netherlands-but I don’t think there is anything similar to those biscuits,they make it lovely and soft,a real cake texture.
    I thought maybe some chopped caramelsweets would give a nice crunch to it.Maybe a layer of apricotjam in between>?
    Anyway,A lovely basic recipe,that I will defenetely make more often from now on.

  15. This was an absolute no-no, so said my family! It may appeal to some but my family has a more mature palate where desserts are concerned. That should have prevented me from trying the recipe in the first place, but thought I’ll give the cake a try anyway.

    This was cake week for me and my family. Have been making the eggless cakes every other day. Made the Biscuit Cake yesterday. Perfect … I could slice the cake so well. We don’t get parle-G Biscuits here in Germany .. so i used the normal Biscuit available here. It was wonderful. Thanks. Please keep posting some more of these sweet (dessert) recipes.     Parle-G will work perfectly for this recipe. The biscuit should be light and crispy but should not fall apart when quickly dipped in milk.

  20. hi guys,,, yes i tried it with marie biscuits and the taste was really gud… but it was difficult to assemble as the biscuits are round. so i had to cut each one and put them together… so yes it wil surely be better with parle g biscuits! 🙂

      Marie biscuit logs are a very nice dish, My mom makes it. What I do with those biscuits are, I top the choc. sauce on the biscuits and put the other one and so on. When I reach the last biscuit on top, I extra-cover it and also on the sides and make towers. 😀

  22. Great recipe!! I do make this dessert often, li’l in a diff way though… i use lots(100 gms) of butter n the chocolate batter isnt that thin.. also i use coffee water to dip the biscuits that way the biscuits dont taste too sweet! But i like this recipe too… u guys are great chefs… 🙂

  24. This looks great! i have made a similar dessert. i took the biscuits and broke them in pieces and layered them in wine glasses with the chocolate sauce, then covered them with plastic wrap and chilled for about 4 hours. Then you just grab a spoon and dig in!

    We use Nesquik (It is a chocolate flavored powder which you put in milk to make chocolate milk) and Hershey’s Cocoa Powder. Nestle also makes a cocoa powder. In the US, you will definitely find these in any local grocery store.

    1. Hi Rajasi,

      For the first time I made the dish I used Weikfield cocoa. The second, I used Cadbury. In my opinion cadbury is better. Hope it helps 😀
