For this recipe, we used just plain chapati flour.  The trick to prevent the sandy feel is to brush off the excess dry flour from the chapati before putting it on the tawa.  If you want, you can use maida.  We use maida in our Roti (Rotli) recipe because it helps us to roll it very thin.</description>
