Vegetable Quesadilla

Vegetable Quesadillas are a wonderful vegetarian menu choice at Mexican restaurants. Now, you can enjoy this Tex Mex favorite at home with your choice of vegetables.

Ingredients:

Oil – for sauteing vegetables
Green (Spring) Onions
Tomatoes – diced
Bell Pepper – diced
Green Chilies – finely chopped
Spinach – chopped
Mushrooms – sliced
Salt – to taste
Garlic Powder – to taste
Red Chili Flakes – to taste
Flour Tortillas
Cheese (your choice -Cheddar/Monterrey Jack/Colby)- shredded
Oil – for pan frying

Method:

1. Use as much or as little of the vegetables as you prefer.
2. Heat Oil in a non-stick pan.
3. Add all of the vegetables and saute for 1-2 minutes.
4. Add Salt, Garlic Powder and Red Chili Flakes.
5. Continue cooking until most of the juices dry up. Keep mixture aside.
6. Heat Oil in a non-stick skillet
7. Place one flour tortilla over the oil and immediately flip over.
8. Cook until light golden brown.
8. Flip over and spread cheese over the tortilla.
9. Spread vegetable mixture over the cheese.
10. Cover with another tortilla.
11. Spread a little oil over the top of second tortilla and flip over.
12. Cook until tortilla is light golden brown and cheese is melted.
13. Cut into quarters and serve hot with salsa, sour cream or guacamole.

  6. Thank you, Anuja! I appreciate your quick reply ;). I think, I overstuff them. Next time, I will try to put less stuffing. The spatula which I used to flip them was no so broad as the one which you have used. I will also try to find that kind spatula in store. Mostly, that will also help. Thanks again!   7. hi hetal & anuja, i loved the recipe and tried to make it but i find so hard to flip the quesadilla, to cook it from the other side..my contents come out of them & they become a mess..what should i do?

    1. HI Pinky,
      It takes a little practice and try not to over-stuff the tortilla.
      Another option is to fill half and then fold over so it is easier to flip. It should look like a ‘D’

  10. I made them this morning for b’fast. They came out great. I used spinach, broccoli, mushrooms, red onions and celery along with Monterey Jack and cheddar cheese.

      Thanks!! Yes, you can use regular onions instead of spring onions. They may take a little longer to cook. Even the mushrooms are optional – skip them if you like.

      For this recipe, all of the ingredients are to taste. If you have more or less of anything, it will not affect the outcome so much. Keep in mind that the mixture will reduce in quantity after cooking so you may need to start off with a lot more veggies than you think.

      So sorry but we are not qualified to give any kind of medical advice. Our honest and best suggestion is to get in touch with a doctor and that way you are really doing it the right way! There are quite a few types of fats – good and bad and you want to make sure you give her the good ones and avoid the bad. The bad ones will just tigger other health issues.     1. Hi Nannu,

      Honestly, we have not tried pre-making them. Tortillas are notorious for getting soggy but you may be able to crisp them up with a little extra oil and re-frying them on the skillet.

      We do not have a video for homemade tortillas yet but you may be able to use thin chapatis or rotis.

    I would like to try this recipe for a party appetizer. Would it be okay to make it a few hours ahead of time and then reheat in the microwave or oven when guests arrive?

    1. Hi Anitha,

      This is best had hot off the griddle. Heating in the microwave does not work well, but we have not tried to reheat them in the oven. The tortillas tend to become chewy and rubbery if left to cool. Maybe you can try it out on a small batch before serving it for your party.

    Can I use corn-tortillas instead of flour ones for this recipe. I live alone and I am planning to try both your quesadilla and enchillada. I just dont want to buy a whole lot of tortillas which I wont be able to finish ๐Ÿ™‚

    1. Hi Aru,

      Corn tortillas will taste awesome! You will have to use the whole tortillas on the top and bottom. Flour tortillas can be folded in half but corn ones tend to break.

      Cheese really adds a lot to this recipe and it binds everything together inside. However, if you are really opposed to it, I guess you could leave it out…the filling is pretty tasty.

      Where do you live? In the US, we get it at Walmart, Kroger or any grocery store. In India, you can substitute the tortilla with Chapati if you can’t find tortillas. Cheese tastes great with anything! ๐Ÿ˜‰

    Yes, you can use chopped frozen spinach in this recipe. You may have to cook it for a bit longer than fresh.
