Quinoa is a high protein seed that is perfect for the vegetarian diet. Originally from Peru, this “grain-like” seed is a great alternative to rice and as an added bonus, it is gluten-free. Try Quinoa in this simple and delicious soup recipe.
Prep Time: 5 minutes
Cook Time: 15 minutes
Serves: 4
Ingredients:
Quinoa - 1/2 cup, washed and drained
Onion - 1 small, chopped
Mixed Vegetables - 2 cups
Green Chilies - to taste, slit
Broth/Stock - 4 cups
Salt - to taste
Black Pepper - to taste
Cilantro (Coriander) - for garnishing, finely chopped
Lime Juice - to taste for garnishing
Method:
1. Place washed Quinoa, Onions, Mixed Vegetables, Green Chilies, Broth and Salt in a pressure cooker.
2. Cover and pressure cook for 1 whistle and switch off stove.
3. Once pressure is gone from the cooker, open lid and add Cilantro, Black Pepper and Lime Juice to taste.
4. Serve hot.

No, quinoa is a seed unlike cracked wheat, which is a grain.

So where would I find quinoa? at a health food store like whole foods or can I get it at walmart - in rice and beans section?
A small request can you try to get recipes that take lesser time - maybe short cuts and quick and healthy meals for busy working moms? I loved your cereal mix and some recipes where you suggest using ready ingredients!

Quinoa is definitely available at the health food stores. We have a “Sprouts - Farmer’s Market” that sells it in a big bin. You can take as much as you like. We have also seen it at a Kroger’s in a packaged tray. Have not seen it at Walmart.
We’ll keep your suggestion in mind

Thank you so much for this recipe! I tried it today and it was quick, easy and absolutely delicious.
I’m off to uni next year, so no more of mom’s homemade cooking… but atleast now I know I won’t starve! This is the perfect on-the-go recipe.
