A nice hot bowl of Sweet Corn Soup is creamy goodness without the cream. Try this Indian Chinese recipe on a cold winter day…it’ll warm you through and through.
Ingredients:
Oil - 1 Tbsp
Garlic - 1 tsp (finely minced)
Ginger - 1 tsp (grated)
Onion - 1 small (finely chopped)
Frozen Peas & Carrots - 1/2 cup
Green Beans - 1/4 cup (cut diagonally)
Cauliflower - 1/2 cp (chopped finely)
Celery - 1/4 cup (chopped finely)
Cream Style Corn - 1 can
Salt - to taste
Black Pepper - to taste
Water - 1/2 cup
Vegetable Broth - 14oz can
Corn Starch - 2 tsp (mixed with a little water)
Sugar - 1 tsp (optional)
Green Onions - 2 (chopped diagonally, for garnishing)
Method:
1. In a medium pot, add Oil, Ginger and Garlic. Allow it to sizzle.
2. Add Onions and saute for 30 seconds.
3. Add Peas & Carrots, Green Beans, Celery and Cauliflower. Saute for 1-2 minutes.
4. Add can of Cream Stlye Corn, Salt and Pepper. Mix well.
5. Add Water and Vegetable Stock. Mix and Bring to a boil.
6. Allow veggies to cook without overcooking them.
7. Mix a little water with the Corn Starch and add it to the soup.
8. Add sugar and adjust salt if necessary.
9. Garnish with Spring (Green) Onions and serve Hot!
10. Serves 4
Tips:
1. Chop some Green Chilies and marinate them in Vinegar. Use this and Soy Sauce as a garnish.
2. Add more or less Corn Starch to thicken soup to your taste.

Vegetable broth is in the aisle where the soups are. It is available at all grocery stores.

Hi Hetal and Anuja,
Just wondering what if I can’t find vegetable broth. Can I use vegetable stock cubes? If so how many cubes to water do I need?
I would also like to tell you that since I have discovered this website not only have I been making some recipes but I have become more confident with my cooking! You 2 are doing a great job! Even my mum is impressed with the Pav Bhaji I made last week!

Thanks for your kind words and we are so happy for you. The Pav Bhaji is a fabulous recipe and we are glad you impresses your mom.
Regarding the Vegetable broth, it is available at regular grocery stores. The vegetable Stock cubes work out just as well, you add 1 cube in 1 cup(8 fluid oz) of boiling water. This recipe calls for 2 cups of liquid (1.5 cup of stock + 1/2 cup of water) so you can use 2 cubes, put them in 2 cups of boiling water and add them in at the right time.
It is possible to make vegetable broth at home, we will have a recipe out very soon.
